ROCKY ROAD BROWNIES
Remember old-fashioned rocky road ice cream? Get that same delicious chocolate, marshmallow and peanut taste all on a rich, fudgy brownie.

- Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 8- or 9-inch square pan with shortening or cooking spray. Make brownie batter as directed on box. Stir in 2/3 cup of the chocolate chips. Spread in pan.
- Bake brownies as directed on box. Immediately after removing from oven, sprinkle with miniature marshmallows, remaining 1/3 cup chocolate chips and the peanuts. (For softer marshmallows, cover pan with cookie sheet about 2 minutes.) Cool completely on cooling rack, about 2 hours. Cut into 4 rows by 4 rows with knife dipped in hot water. Store tightly covered

- Preheat oven to 350 degrees. Butter an 8-inch-square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.
- In a heatproof bowl set over (not in) a saucepan of simmering water, combine butter and 1 cup chocolate chips. Heat, stirring occasionally, just until melted, 3 to 5 minutes.
- Remove mixture from heat; stir in sugars and salt, then eggs, and finally flour, stirring just until combined. Spread batter evenly in prepared pan. Bake until a toothpick inserted in center comes out with moist crumbs attached, 30 to 35 minutes.
- Remove from oven, and sprinkle with remaining chocolate chips, then marshmallows and nuts. Bake until chocolate is shiny and marshmallows are puffed, about 5 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 squares.

DELICIOUS & GOOEY ROCKY ROAD BROWNIES
My sister introduced me to these super yummy brownies. I could eat an entire pan by myself. Yes, I would be a bit sick after, but definitely worth it! She and I don't care for nuts, so if you want to add them, feel free. I guessed on the amount of marshmallows. You want them to completely cover the brownies. The cooking time does not include the cooling time for brownies.

- Mix butter, sugar and cocoa together. Add one egg at a time, beat well after each egg. Add flour, salt and vanilla. (Stir in nuts if you choose.).
- Put in a greased and floured 9x13 pan.
- Bake at 350 for 25 minutes. Remove from oven.
- Place mini marshmallows on top of cooked brownies and return to oven until marshmallows are light brown. (WATCH CLOSELY!).
- Cool completely and top with fudge frosting. Mix all ingredients together then frost cooled brownies. (If you don't cool all the way, the marshmallows will move all over the place when you try to frost).

I first tasted these when my mom used to make them when I was a child, and although that was many moons ago, they still make me feel like a kid when I eat 'em! The melted chocolate drizzle at the end makes these brownies rich and very chocolaty!!

- For the brownies, melt chocolate and butter in a saucepan over very low heat, stirring constantly.
- Remove chocolate/butter mixture from heat and stir in the sugar.
- Beat in the eggs, one at a time.
- Be sure to mix well.
- Blend in the vanilla.
- Combine flour and salt, add to mixture and blend together.
- Spread the batter into a buttered 9 inch square baking pan.
- Bake in a pre-heated 350 degree oven for 45-50 minutes.
- Cool brownies in the pan on a rack for 10 minute.
- Topping:.
- While brownies are cooling, melt butter and chocolate in saucepan for topping.
- Sprinkle brownies evenly with marshmallows and walnuts.
- Return brownies to oven and bake another 3 minutes.
- Remove brownies and drizzle with the melted chocolate.
- Cool in pan, then cut into squares or rectangles.

- Tip:.
- If you want to reduce the calories, just cut the marshmallows to 1 cup, and omit the walnuts, but if your gonna eat brownies WHY would ya do that?
