HIDDEN VALLEY RANCH SAUSAGE STARS
These are easy to make you can do the wonton wraps the day or so ahead and have the sausage mixture made in advance then just 5 minutes before serving you fill the wraps and pop them in the oven. For a lighter exterior I prefer to use Spring Roll wraps. Use your regular pork breakfast sausage. if you wish use Italian sausage or bratwurst

Steps:
- Heat oven to 350 degrees F.
- Combine drained cooked sausage meat with the cheeses, salad dressing, olives and red pepper
- Lightly oil mini muffin tins and press a wrap in each tine so there are 4 wings sticking out
- Brush with oil bake 5 minutes until golden, remove wraps from pan, place on a baking sheet
- Fill wraps with the sausage, cheese mixture
- Bake for 5 minutes or until the cheese is bubbly& brown.

CHEESE STARS
This is a very popular crunchy snack in my house - a batch will disappear within ten minutes! I often make a variety of shapes (stars, hearts, sticks - good for dipping). Feel free to add any spices you like to the mixture - it only gets better with experimentation! I've even sauted some chopped garlic and added it to the mixture with the spice - especially good with rosemary added.

Steps:
- 1. Preheat the oven to 200C, or 180C fan assisted. Grease and flour two large baking trays.
- 2. In a large mixing bowl, stir together the flour, salt, herbs and spices. Crumble in the stock cube and stir well until evenly distributed.
- 3. Rub in the butter until the mixture resembles breadcrumbs.
- 4. Stir in the cheese until well distributed (I find using two forks to pull apart the clumps of grated cheese is a good method).
- 5. Mix in the egg yolk with your fingers, working the mixture to a dense dough. You may need to add a splash or two of water to achieve the correct consistency - the mixture should not be sticky, but should not leave crumbs in the bowl.
- 6. Roll out the dough on a lightly floured surface to a thickness of around 5mm - this isn't too vital, but will affect cooking times.
- 7. With a star-shaped cutter, stamp out as many shapes as you can from the dough and place, slightly spaced, on the baking sheets. Re-roll the dough and repeat until you have too little left to work with.
- 8. Brush each star with a little egg white and bake in the preheated oven for around ten minutes until golden.
- 9. Remove and cool on wire trays.

MERINGUE STARS

- Make vanilla and coffee meringues:
- Preheat oven to 200°F with racks in upper, middle, and lower thirds of oven (or use 2 racks and bake in batches). Line 2 or 3 large baking sheets with parchment paper.
- Beat 1 egg white with vanilla (for vanilla meringues) and a pinch each of cream of tartar and salt with an electric mixer at medium-high speed until it just holds soft peaks. Add 2 tablespoons superfine sugar, a little at a time, beating, then increase speed to high and beat until meringue holds stiff, glossy peaks. Fold in 2 tablespoons superfine sugar gently but thoroughly.
- Transfer meringue to a pastry bag fitted with tip, then dab some meringue under corners of parchment on all baking sheets to secure to sheets. Pipe 1-inch-wide stars (1 inch high) about 1/2 inch apart.
- Make coffee meringues using same amounts and procedure as above but using espresso powder (1 1/2 teaspoons) in place of vanilla.
- Make chocolate meringues:
- Sift cocoa through a fine-mesh sieve and whisk together with 2 tablespoons superfine sugar.
- Beat remaining egg white with a pinch each of cream of tartar and salt with mixer at medium-high speed until it just holds soft peaks. Add remaining 2 tablespoons superfine sugar, a little at a time, beating, then increase speed to high and beat until meringue holds stiff, glossy peaks. Fold in cocoa mixture gently but thoroughly.
- Transfer meringue to a pastry bag and pipe more stars.
- Bake meringues:
- Bake, switching position of upper and lower sheets halfway through baking, until dry, crisp, and firm, 1 1/2 to 2 hours. (Meringues are done when they release from parchment.)
- Turn off oven and cool meringues in oven with door propped open about 1/2 inch using handle of a wooden spoon 1 hour, then slide parchment with meringues onto racks to cool completely.
- Dip meringues in chocolate:
- Line a large baking sheet with parchment or wax paper.
- Stir together chocolate and vegetable oil until completely smooth. Peel meringues off parchment, then dip bottom of each into chocolate, allowing excess to drip off. Transfer meringues to lined baking sheet, arranging as close together as possible, and when baking sheet is full, freeze meringues just until chocolate is set, about 3 minutes. Remove meringues from freezer.
