SAWDUST PIE

This pie is great when served with a big scoop of vanilla ice cream.

Steps:

  • Cover pie shell with two layers of foil and bake in 450 degree F oven for 8 minutes. Remove foil and bake 4 to 5 minutes until golden brown. Cool on a wire rack.
  • Combine coconut, graham cracker crumbs, pecans and sugar in a large bowl. In another bowl, beat egg whites just until foamy; add to the coconut mixture. Mix well. Pour into prepared pie shell. Bake uncovered in 350 degree F oven for 35 minutes or until set.

1 9-inch pie shell
1 1/2 cup flaked coconut
1 1/2 cup graham cracker crumbs
1 1/2 cup pecans, chopped
1 1/2 cup sugar
1 cup egg whites

SAWDUST PIE

This recipe has one of the most un-pie pie fillings you'll ever come across. There's nothing moist or juicy about it, and the name itself could very well scare you off, but somehow it all comes together. If you can imagine something like a coarse graham cracker-coconut cake, that would begin to describe it. You have to try this one to appreciate it. It begs for ice cream and a drizzle of caramel sauce.

Steps:

  • Prepare and refrigerate the pie dough. Roll the dough into a 12½- to 13-inch circle and line a 9- to 9½-inch deep-dish pie pan with it, shaping the edge into an upstanding ridge. Flute or crimp the edge, then refrigerate the shell until needed.
  • Whisk the egg whites, sugars, and vanilla in a bowl until evenly mixed. Add the graham cracker crumbs, coconut, pecans, and salt. Stir briefly, then add the butter and stir just until the filling is evenly mixed. Don't overmix.
  • Turn the filling into the pie shell and spread it evenly with the back of a spoon. Bake on the center oven rack for 40 to 45 minutes, until the top is crusty and has risen, rotating the pie midway through the baking. It's fine if the pie develops cracks here and there.
  • Transfer the pie to a rack and cool for at least 2 hours before serving. Serve warm or at room temperature, garnishing slices lavishly with vanilla or butter pecan ice cream and a drizzle of caramel sauce, if desired. Cover and refrigerate leftovers.
  • Recipe for Success:
  • Chop the nuts by hand, not in the food processor, for the best texture. (The food processor can make them too fine if you're not careful.)
  • Don't overmix the filling. The more you work it, the stiffer and less spreadable the filling becomes.
  • You'll have a lot of egg yolks left over with this pie. Consider making crème brûlée or custard with them.

Old-Fashioned Shortening Pie Dough or another single-crust dough
7 large egg whites
1 cup granulated sugar
½ cup packed light brown sugar
1½ teaspoons vanilla extract
1½ cups graham cracker crumbs
1½ cups sweetened flaked coconut
1½ cups finely chopped pecans
⅛ teaspoon salt
3 tablespoons unsalted butter, melted
Vanilla or butter pecan ice cream, for serving
Caramel sauce, for garnish (optional)

  • Preheat oven to 350 degrees F (175 degrees C). Press pie crust into a 9-inch pie plate.

Derby Day is the First Saturday of May. I was perusing through some of my cookbooks and I'm not sure about you, but I tuck handwritten recipes I want to keep inside my cookbooks - I know, not the most organized method of storage - perhaps I'll work on fixing that for 2012. Any way - I'm posting this recipe that I found stuck in a cookbook, that was written down by my Granny. It's actually a recipe that my Mom got from a chef who worked at a restaurant in the Doctors Office Building (corner of Floyd & Liberty in downtown Louisville). More info below.

Steps:

  • Fit pie crust into 9-inch pie plate. Preheat oven to 325°F. There are some folks who would prick the crust and partially bake it to prevent a soggy crust. I think doing this depends on your weather and if your pie crusts tend to get soggy while baking.
  • Mix sugar and flour together. Add eggs, butter, nuts, chocolate chips and vanilla. Stir until blended. Pour into crust-lined pie plate.
  • Bake 1 hour at 325°F. Test for doneness with a toothpick - it should show no more than dry crumbs.
  • Variation: add 2 Tbsp Bourbon to pie filling while mixing and continue as directed. This one doubles easily, too, but I tend to mix the fillings separately to make sure the ingredients stay evenly divided on each pie.

  • More Info on the recipe: I can't call this pie the name that was given to it by that Chef, because, Kern's Kitchen has trademarked the name, "Derby Pie" - see info below; however, that same Chef allegedly told Mom that this is THE "Derby Pie" recipe. Maybe he worked for them back in the day - I don't know, I was young at the time. I just know it is one "de-lish" pie. SO - I've called it Derby Day Celebration Pie to keep in the theme of things. Enjoy! Kern's Kitchen makes their pies with walnuts, but my preference is for pecans. The best way to serve a slice of this pie is warm and topped with real whipped cream - just like Momma Kern would have.
