- Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking powder and salt in a medium bowl. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Beat in the egg and vanilla. Reduce the mixer speed to medium low; beat in the flour mixture in 2 batches until combined.
- Transfer the batter to a resealable plastic bag and snip the corner to create a 1/2-inch opening. Pipe the batter into 1/2-by-3-inch strips, about 2 inches apart, on the prepared baking sheets. Bake, switching the pans halfway through, until the cookies are golden around the edges, about 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
- Line a baking sheet with parchment. Put the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until smooth. Dip the cookies halfway in the chocolate, letting the excess drip off, then place on the prepared baking sheet. Refrigerate until the chocolate just sets, 10 to 15 minutes.
DIPPED CHOCOLATE CHIP COOKIES
This yummy recipe was submitted by Senator Christopher Bond to a community cookbook. I used 1 cup of chips in the cookies and 2 cups melted. It helps to have a knife handy to help spread the chocolate on the cookie.

- Preheat oven to 375°. Set aside 1 1/2 cups of the chocolate chips.
- Cream the sugars, butter, eggs, and vanilla until light and fluffy. Add the baking soda, salt, and flour gradually, mixing well until smooth. Add remaining chocolate chips and pecans.
- Drop rounded teaspoonfuls of dough about 3 inches apart on a cookie sheet, flattening each with the palm of your hand.
- Bake 8-10 minutes or until done. Remove from sheets and cool on rack.
- Melt reserved chocolate chips. Dip half of each cooled cookie in chocolate. Place dipped cookies on wax paper lined cookie sheet and cool in the refrigerator until chocolate hardens.

- Preheat your oven to 350 degrees F.
- Line your baking sheet with parchment paper {I had waxed and used it with good results} and set aside. I used my Kitchen Aid with regular beater {but a hand beater would work just as well} and creamed together the butter with 1/2 cup of the sugar until lightly and fluffy, then mixed in the vanilla until smooth. Add the almonds, potato chips and flour together and mix until a huge bowl of crumbly looking dough; it will be moist though.
- Place the remaining 1/2 cup sugar in a small bowl. Scoop a tablespoon-sized mound of dough and form it into a small ball with the palms of your hands. Roll the ball in the remaining sugar until coated. Place on prepared baking sheet and using the bottom of a drinking glass or measuring cup to slightly flatten the cookies. Cookies only need to be an inch apart; they only spread a little.
- Bake cookies until lightly golden at the edges, about 15 minutes. Transfer to cool on a wire rack.
- If dipping in chocolate, melt chocolate with butter, oil or shortening in a double boiler or in short bursts in the microwave {I do it this way-- 30 seconds, stir, repeat}. Stir until smooth. Dip half of each fully cooled cookie in the chocolate, and let dry and harden on a wire rack.

- In a large bowl, cream butter and sugar. Beat in egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to the creamed mixture. Stir in almonds and chocolate chips. - Using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 8 equal-sized mounds of dough. Tip – Strategically place a few chocolate chips on top of each mound of dough by taking chips from the underside and adding them on top. I also supplemented the chocolate chips by adding a few extra from the bag of chips (you won’t need the entire bag for dipping).
- Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, or overnight. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading and this dough is already prone to spreading.
