DON CAMILLO'S GARLIC AIOLI

North Texas is blessed in having the only Don Camillo's in the U.S. Although they are scattered across Austria, Spain, and I believe there is even one in France, most people are not lucky enough to ever know REAL, homemade in a wood burning oven ITALIAN food. So I thought I'd post some of my first and favorite chef's best recipes. This is the creamy mayo that accompanies the bread when you sit down. They serve it for 8 bucks a jar.... I think we can make it for less ;) I tried this as a sandwich spread on a 2 foot italian sub I made for my aunt's wedding...I was very popular that day.

Don Camillo's Garlic Aioli image

Steps:

  • Mince Garlic and Parsley seperatly in a food proccesor.
  • Fold into mayo until evenly distributed.
  • Add olive oil and salt and whisk and whisk and whisk and whisk.
  • I usually use a little -- it makes great and easily spreadable garlic butter, and put the rest back in the mayo jar.

30 ounces mayonnaise (Food vendor's only distribute name brands when they're requested)
3 1/2 ounces fresh peeled minced garlic (about 7-8 cloves)
2 ounces minced fresh parsley
1 teaspoon olive oil
1/2 teaspoon salt

Steps:

  • In the bowl of a food processor, fitted with a metal blade, combine the egg, mustard, garlic and lemon juice. Season with salt and pepper. With the machine running, add the oil in a steady stream until the mixture is pale in color and thick. Remove from the processor and refrigerate for 1 hour.

1 large egg*
1 tablespoon Dijon mustard
1 tablespoon chopped garlic
Juice of one lemon
Salt
Freshly ground white pepper
1 cup vegetable oil

i couldn't find this anywhere on this site... i'm planning on making this for our pizza tonight (garlic aeoli sauce with chicken, herbs, tomato and feta) but i know garlic aeoli is good with just about anything else, too! try it on a hot dog, as a dip for chips, veggies... just about anything! enjoy!

Steps:

  • in a blender, combine garlic, egg, lemon juice, parsley, salt and pepper.
  • put on the fastest setting.
  • add the oil in a slow stream and continue to process until the mixture has formed a thick texture.
  • *this is more or less the same recipe i use when making mayonnaise. 1/2 cup oil, 1 egg, 1 tbsp lemon juice and a dash of paprika.
  • *please note that this does use a raw egg. i prefer to get my eggs from a free range family in my area. although i have heard people say to use store bought (which i don't trust--personal opinion) just make sure to wash the egg before cracking. the use of the lemon kills bacteria with it's high acidity.

This was a little something I came up with one night when we were in need of a shopping trip and I wanted something to put on burgers. My Dh gave it 5 stars which is rare for him so I figured I would post it here.

Steps:

  • Combine all ingredients and store in an airtight container in fridge for at least 2 hours for flavors to blend.
  • Serve on burgers, as a dip, on a sandwich, or any way else you might like.
  • *Cook time is chill time*.

Steps:

  • Roast the garlic head by cutting a thin slice off the very top of the head to expose the tops of all the cloves. Set the head in a shallow baking dish, and drizzle 2T olive oil over the head and season with salt and pepper.
  • Cover w/ foil.
  • Bake in a 300 degree oven for 1-1/2 hours till garlic is very soft.Set aside.
  • When cool squeeze the pulp out of the garlic into a blender and add egg yolks, garlic, lemon juic, water, salt, and cayenne.
  • Puree till smooth.
  • With motor running add the reserved oil from roasted garlic plus the additional 1-1/2 c oil in a slow steady stream and continue processing till emulsified.
