DOTTY'S JAM CAP PUDDING(MICROWAVE)

This is a quick fix if you need a pudding in a hurry, it look's a bit pale but once the custard is on you won't notice and it is so light and tasty. My DH will not eat pudding so when I have company at short notice I can serve this, it always goes down a treat. You can use veg suet I do.

Steps:

  • Grease 900ml pudding basin and place jam in the base.
  • Sift the flour into a bowl and add the suet, and sugar and mix.
  • Mix the vanilla essence, egg, and 6tbls of milk together in a separate bowl.
  • Then mix the contents of the two bowls together, do not beat.
  • Pour over the jam and cover with cling film and puncturing to prevent ballooning.
  • Cook on high for 5 minutes.
  • Take out and let it stand for 5 minutes before removing the cling film and invert pudding onto a plate.
  • Serve with cream or custard.

Steps:

  • In a medium bowl, whisk milk and pudding mix for 2 minutes. Fold in whipped topping. Pulse cookies in a food processor until fine crumbs form or until desired texture is reached. Divide a third of the cookie crumbs and half of the pudding mixture among 10 dessert cups; repeat layers. Top with remaining crumbs. If desired, top with sugar gum succulents, chocolate rocks and edible paper butterflies.

Easy Microwave Sponge Pudding image

Steps:

  • In a bowl cream the Butter and Sugar together untill smooth.
  • Add in the Eggs, and beat quickly so that it does not curdle (You could add a tbsp of flour at this point - if you are worried about it curdling).
  • Once the Eggs are combined, add in all of the Flour, and combine together, try to get as much air in the mixture as possible.
  • Grease a separate bowl with a little butter. In the bottom of the bowl put in your topping, (eg - Jam).
  • Once the Jam is in the bottom, add the sponge mixture on top of the Jam and level out slightly.
  • Cover with cling film or a plate and microwave for about 6-8 minutes (Time may vary on individual microwaves - so if you think it needs more time dont worry - you cant over cook the sponge - just be carefull if you have used chocolate spread this can burn)
  • Once cooked remove the cling film or plate (be carefull it will be hot). Place a large plate over the top of the bowl - holding the bowl and plate together - flip the bowl upside down and the sponge should land on the plate. Take the bowl off, cut into 4 and serve with custard.
