- Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners; coat liners with cooking spray.
- Mix chocolate drink powder into the milk. Stir until smooth.
- Beat brown sugar, egg, oil, and vanilla extract together until well mixed.
- Add chocolate milk to egg mixture and stir to combine. Add baking mix and mix well. Fold in chocolate chips. Spoon batter evenly into muffin cups, filling nearly to the top.
- Bake until a toothpick comes out with only moist crumbs attached, 15 to 18 minutes.

DOUBLE CHOCOLATE ZUCCHINI MUFFINS
Steps:
- Preheat your oven to 350 degrees F (175 degrees C) and line or grease a regular muffin tin.
- Mix the mashed avocado, milk, oil, egg, sugars and vanilla until very smooth. Stir in the grated zucchini.
- Sift over the flour, cocoa powder, baking powder, baking soda, salt and cinnamon and mix just until combined. Divide the batter into the muffin tin and scatter the top of each with chocolate chips.
- Bake the muffins until they bounce back when touched or a skewer inserted into the center comes out clean, 20 to 23 minutes.
- Remove the muffins from the tin to cool completely. The muffins will keep at room temperature for up to 4 days or can be frozen for up to 3 months.
SALTED CARAMEL CUPCAKES

- Heat the oven to 180C/160C fan/gas 4. Line a 12-hole cake tin with paper cases.
- Beat the butter and sugar together with an electric whisk until pale and fluffy. Add the eggs, one at a time, and the vanilla extract. Briefly mix in the flour until just combined, and stir in the milk until the batter just falls off the beaters.
- Divide the mixture between the cases, leaving about 2 tbsp batter in the bowl. Add a pinch of salt to the caramel sauce if it's not salted caramel, then add ½ tsp to the tops of each cupcake. Use a teaspoon to cover the caramel sauce with the remaining batter. Bake for 15-20 mins until springy and golden. Leave to cool completely on a wire rack.
- Meanwhile, make the icing. Beat the butter and half of the icing sugar together, then tip in the remaining icing sugar and whisk vigorously until pale and fluffy. Stir in half of the caramel sauce, then spoon the mixture into a piping bag with a round or star nozzle.
- Pipe swirls of icing on top of the cooled cupcakes. Stir the remaining caramel sauce with a pinch of salt, if unsalted, then use to drizzle over the icing. Sprinkle over a small pinch of sea salt over each, if you like.

- Make the caramel sauce: combine liquid coconut cream and vanilla extract; set aside. In a medium, heavy bottomed saucepan, add the sugar and then the water - don't stir. Swirl the pan gently until sugar is soaked.
- Place sugar mixture over medium heat and bring to a boil. Without stirring, boil the mixture until it turns amber in color. The sugar will go from amber to burnt quickly, so keep an eye on it! And do not stir it!
- Once the amber color is reached, immediately remove from the heat and place on a towel or hot pad. Using a wooden spoon, slowly stir in the coconut cream mixture, being cautious as the mixture is extremely hot and will bubble up!
- Return caramel sauce to medium heat and bring to a boil. Boil for 5-10 minutes or until caramel thickens. Transfer caramel to a room temp, heatproof bowl to cool.
