DOUBLE CHEESE SPINACH CASSEROLE

This is a yummy side dish and if you use fat free or low fat ingredients, it doesn't have to destroy your diet yet it still tastes good!. I call it damage control!

Double Cheese Spinach Casserole image

Steps:

  • Preheat oven to 350^F.
  • Butter an 8x8x2 inch baking pan.
  • Beat together in a large bowl, the eggs, salt and pepper.
  • Mix in remaining ingredients until blended.
  • Transfer to baking dish.
  • Bake until center is firm and top is beginning to brown, about 45 minutes.

1 bunch green onion, chopped

1 (16 ounce) container cottage cheese (I use fat free)
1/4 cup flour
3 tablespoons fresh dill, chopped

Steps:

  • Thaw spinach souffle in microwave at medium power 6-7 minutes.
  • Thaw creamed spinach in microwave at medium power 5-6 minutes.
  • Combine spinach, egg, and 1/2 cup cheese; spoon into a lightly greased 11 X 7 inch baking dish.
  • Bake at 375 degrees for 40-50 minutes or until set.

Steps:

  • Preheat oven to 400 degrees F.
  • Butter a 9 inch glass pie plate.
  • Combine the eggs, bread crumbs, cream cheese, salt and nutmeg and stir in spinach, half and half and Cheddar.
  • Transfer spinach mixture to pie plate and bake for 20-25 minutes, or until set and puffed slightly.
  • Note: I sometimes fry up a few rashers of bacon until crisp, drain and crumble them into the spinach mixture.

Steps:

  • Preheat oven to 350 degrees. Cook pasta according to package directions. Drain; set aside.
  • Melt 1 tablespoons butter in a nonstick skillet. Add mushrooms, green onion, and garlic. Cook and stir over medium heat until mushrooms are softened. Add spinach and water. Cover; cook until spinach is wilted, about 3 minutes. Add salt and pepper to taste.
  • Combine ricotta cheese, milk, egg, nutmeg, salt, black pepper and herbs, if using, in large bowl. Gently stir in noodles and vegetables; toss to coat evenly.
  • Lightly coat a shallow 1 1/2 quart casserole with nonstick cooking spray. Spread noodle mixture in casserole. Sprinkle with parmesan cheese. Bake 25-30 minutes or until knife inserted halfway to center comes out clean.
