THE ULTIMATE CHICKEN NOODLE SOUP
My first Wisconsin winter was so cold, all I wanted to eat was homemade chicken noodle soup. Of all the chicken noodle soup recipes out there, this type of soup is my favorite and is in heavy rotation from November to April. It has many incredibly devoted fans.-Gina Nistico, Denver, Colorado

- Pat chicken dry with paper towels; sprinkle with salt and pepper. In a 6-qt. stockpot, heat oil over medium-high heat. Add chicken in batches, skin side down; cook until dark golden brown, 3-4 minutes. Remove chicken from pan; remove and discard skin. Discard drippings, reserving 2 tablespoons., Add onion to drippings; cook and stir over medium-high heat until tender, 4-5 minutes. Add garlic; cook 1 minute longer. Add broth, stirring to loosen browned bits from pan. Bring to a boil. Return chicken to pan. Add celery, carrots, bay leaves and thyme. Reduce heat; simmer, covered, until chicken is tender, 25-30 minutes., Transfer chicken to a plate. Remove soup from heat. Add noodles; let stand, covered, until noodles are tender, 20-22 minutes., Meanwhile, when chicken is cool enough to handle, remove meat from bones; discard bones. Shred meat into bite-sized pieces. Return meat to stockpot. Stir in parsley and lemon juice. If desired, adjust seasoning with additional salt and pepper. Discard bay leaves.

MAMA JEAN'S CHICKEN NOODLE SOUP

Steps:
- Melt the butter in a large Dutch oven over medium heat and add the olive oil. Add the onion, celery and carrots and saute until soft, about 4 minutes. Season with salt and pepper, to taste. Stir in the chopped garlic and saute until fragrant, 1 minute more. Whisk in the flour and stir frequently until it coats the vegetables and makes a paste. Cook until it reaches a pale blonde color, about 2 minutes. Gradually whisk in the chicken stock, making sure there are no lumps. Add the bay leaf, hot sauce, and Worcestershire and season with salt and pepper, to taste. Let the soup simmer for 15 minutes to thicken and develop the flavors.
- Reduce the heat and add the chicken and the noodles. Do not boil the chicken or it will become tough. Add the peas and the dill and simmer gently for 10 more minutes.
- Taste for seasoning and add more salt and pepper, if needed. Ladle the soup into serving bowls and serve.
DOWN-HOME CHICKEN SOUP WITH DUMPLINGS
These hearty dumplings give extra body to this classic chicken soup.

- In a large pot, bring broth to a simmer over medium-high. Meanwhile, in a medium bowl, mix together flour, cornmeal, baking powder, and salt. With a fork, stir in buttermilk and spinach to form a dough.
- Drop dough by rounded tablespoonfuls on top of simmering broth. Cover and cook until dumplings are cooked through, 7 to 10 minutes. Gently stir in chicken, season with salt and pepper, and cook until chicken is warmed through, 1 to 2 minutes. Serve with lemon wedges.

- Place chicken in a slow cooker; sprinkle with salt and pepper. Top with both cans of soup. Cover and cook on low setting for 6 hours or until chicken is tender. Remove chicken from slow cooker and shred (I left the chicken breasts whole.) Return chicken to slow cooker; add broth and cooked noodles. Mix well. Cover and cook on low setting for an additional 30 minutes or until heated through. Sometimes I just throw in some leftover vegetables at this point, if I have any - like peas and/or carrots. Sometimes I add a little thyme, because I like the flavor.
REAL CHICKEN NOODLE SOUP
This is homemade goodness! I was disappointed by the number of recipes I saw with bouillon or broth in them. My favorite chicken soup is made with a whole chicken, water, and veggies... and the taste is pure and delicious. No MSG or other fillers getting in the way. To make this truly from scratch, you could make your own egg noodles as well (try recipe # 95311) but pre-packaged ones do fine too. Adjust the noodle amount to how you like it... either a lot of noodles or a little. Enjoy this soup when you are under the weather or just as a warm comfort food. We love it served with a nice crusty bread with butter. Oh, and my 2 year old loves this too! It's perfect for little fingers and noodles and veggies are soft for them to chew.

Steps:
- Discard chicken parts on interior of chicken and thoroughly rinse chicken. Place in large stockpot or Dutch oven.
- Add carrots, onion, water, salt and pepper.
- Cover and cook over high heat until boiling.
- Once boiling, lower heat to low to maintain a simmer, and cook for 45 minutes or until chicken is fork tender.
- Remove chicken, and place on cutting board to cool enough to handle.
- Add celery and noodles to pot. Simmer for 10 - 20 minutes, or until noodles are tender.
- During this time, begin cutting up your chicken meat (we use only the breast meat) into chunks or shreds -- however you like it.
- Add the meat to the soup before serving.

- In a stockpot, combine the first 12 ingredients; bring to a boil. Reduce heat; cover and simmer for 2-1/2 hours or until chicken is tender. , Remove chicken from pot. When cool enough to handle, remove meat from bones; discard bones. Cut meat into bite-size pieces. Strain broth and skim fat; return to the pot. Add chicken and carrots., For noodles, in a small bowl, combine flour and salt. Make a well in the center. Beat egg and milk; pour into well. Stir together, forming a dough. , Turn dough onto a floured surface; knead 8-10 times. Roll into a 12-in. x 9-in. rectangle. Cut into 1/2-in. strips; cut the strips into 1-in. pieces. HOMESTYLE CHICKEN NOODLE SOUP
This is a variation of a recipe I found on here. So yummy. True Comfort food. I have also made this using homemade noodles and it turns out fantastic. Also, if you have left overs, refrigerate them and the next day the broth thickens to a sort of gravy making it even better imo.

- To cook the chicken breast, wrap each breast tightly in foil and bake on cookie sheet until no longer pink. No water or seasonings needed, the foil keeps the chicken's natural juices "trapped" so it cooks moist and tender. Chop into pieces of whatever size you desire.
- In large stockpot, add broth and start cooking on high heat. Chop veggies to whatever size of pieces you desire. I keep mine on the larger size. Add to broth.
- Add all seasonings to broth, including bay leaf, cover and bring to a rolling boil.
- When boiling, add noodles and chicken to broth, lower heat to med and bring back to a boil, uncovered.
- Boil for approx 25 min or until noodles are al dente.
- Lower heat to get a good simmer. Simmer 15-20 min uncovered. Give a good stir, remove bay leaf and serve.
- Optional Additions:.
- 1/4 tsp celery seed.
- omit onion powder and instead add 1/4c chopped onion.
- Note: If you don't have fresh parsley you can use 1T dried parsley instead.
- Prep time is an estimate and does not include cooking time for the chicken breasts.

- For Noodles: Mix egg, oil, salt, and water together.
- Add all purpose flour until it becomes a soft dough.
- Roll dough out on a floured surface to very thin.
- Let dry for at least 3 hours.
- Cut into small noodle sized strips.
- For soup: Cover chicken with water in a large stove top pot.
- Add chicken broth, carrots, celery, garlic and onions.
- Boil until chicken is done.
- Remove chicken and debone.
- Place chicken back in pot.
- Add additional water to soup mixture if needed, usually about 4 cups.
- Bring soup mixture to boil and then add noodles.
- Boil soup until noodles are soft and ready to eat.
- Salt and pepper to taste.
