ABALONE HORS D'OEUVRES

Abalone Hors d'oeuvres image

Steps:

  • Preheat oven to 350 degrees F.
  • Place the bacon strips on a rimmed baking sheet. Bake until bacon is about halfway cooked, about 5 to 10 minutes, making sure not to crisp the bacon. Remove the bacon from the oven, drain on paper towels and cool.
  • Place a piece of cheese on top of each steak and roll the steak up around the cheese. Wrap a piece of bacon around each steak, covering as much of the exposed steak as possible. Cut off any excess bacon and secure the rolls with a toothpick.
  • Grill abalone rolls, turning once, until the bacon is browned and crisp and the cheese begins to melt out the ends, about 2 minutes.

Rivoli Hors d'Oeuvres image

Steps:

  • For Pickled Herring Mousse:
  • Chill mold for mousse in freezer. Blend herring, 1 at a time, to a fine puree. Strain through a fine sieve. Puree apples with Calvados, and add to herring puree. Stir in cream. Season with salt and pepper.
  • Dissolve gelatin in water over low heat. Do not let boil. Set aside to cool.
  • Fold egg whites into herring-apple puree, then whisk in cooled gelatin. Pour in chilled mold and place in refrigerator to set.
  • To serve, unmold and slice.
  • For Onions and Raisins in a Seasoned Sauce:
  • Heat 2 tablespoons butter in large pan over medium heat. Add onions and gently cook. Then add 1/2 of the white wine, half of the ketchup, and half of the raisins. Saute for a few minutes. Season with salt and pepper.
  • In a separate pan, heat remaining butter over medium heat. Add mushrooms and cook gently. Add the remaining wine, ketchup, and raisins. Season with salt and pepper.
  • Chill each mixture in separate bowls until ready to serve.
  • For Veal Brains in Marinade:
  • Drain brains and place in saucepan with fresh water to cover. Bring to boil, over medium heat. Remove and plunge into a bowl of ice water to stop cooking. Once cooled, drain, trim off fat and skin, and cut into 1-inch pieces. Set aside.
  • Blend together sugar, vinegar, oil and cayenne. Pour over brains and chill for 1 hour.

24-ounce jar pickled herring, about 5 fish
2 large green apples, cored and seeded
1/4 cup Calvados
1/4 cup whipping cream
Freshly ground salt
Freshly ground white pepper
1 package gelatin
1/2 cup cold water
2 egg whites, whipped* (See Disclaimer)
4 tablespoons clarified butter
4 onions, 2 ounces each, quartered and petals separated
3/4 cup dry white wine
3/4 cup ketchup
1/2 cup golden raisins
Freshly ground salt
Freshly ground pepper
8 ounces button mushrooms
2 veal brains, rinsed well and soaked in cold water for 1 hour
1/4 cup sugar
1/2 cup white wine vinegar
1/4 cup olive oil
1/4 teaspoon cayenne pepper

Roasted Potato-Chorizo Hors d'Oeuvres image

Steps:

  • In a saucepan of actively boiling lightly salted water, blanch the potatoes for 8 to 10 minutes, or until the tines of a fork will just pierce the surface. Drain and, when cool enough to handle, cut them in half and score the cut side of each with the tines of a fork. Preheat the oven to 375 degrees an heat a large cast-iron skillet over medium heat. In a bowl, combine the potatoes with the olive oil, oregano, salt, and pepper and toss together until evenly coated. Transfer the potatoes to the hot skillet and spread them out into an even layer so they are hardly touching each other. Heat until sizzling, then transfer the skillet to the hot oven. Toast, turning over every 10 minutes, for about 30 minutes, until very crisp and golden.
  • While the potatoes are roasting, heat a large non-stick skillet over medium-high heat and add 2 tablespoons water. Cook the sausages for about 20 minutes, turning occasionally and pouring off the fat as it accumulates. Drain the sausages briefly on a double thickness of paper towels and slice them 3/4 thick. Place a slice of sausage on top of each roasted potato half and secure with a toothpick. Assemble the hors d'oeuvres on a platter and squeeze a little lime juice over them. Serve, accompanied by Avocado Salsa

  • Pour the stock in the sauce pot and add the sliced shallot. If you have any wings, necks, or giblets saved, add them to the stock. Turn the heat to high and let the stock boil. Reduce to 1/4 cup, then strain the solids. Reserve the reduced stock until needed.
  • While the stock is reducing, pat the surface of the duck breasts very dry with a paper towel. Using a sharp knife, score the skin of the ducks into cross-hatch patterns about one inch wide. This allows the fat underneath the skin to render out. Season with salt and pepper just before cooking. If you do this step in advance, be sure to blot any moisture the salt pulls from the skin.
  • If you have very fatty ducks, place them skin side down in a cold pan and turn the heat to medium-high. You do not need to add any fat. If the duck breasts have little to no fat under the skin, you will want to pre-heat the pan to medium-high. Add a drizzle of cooking oil or duck fat to the pan and sear the breasts, skin side down first.
  • If the duck breasts begin to contract or dome up in the center, press them flat with a spatula. Flip after 2-4 minutes, or once the skin is golden brown and crispy. You will continue to cook on the opposite side until cooked through to medium-rare. A very small duck may only take an additional minute, while a large mallard or specklebelly will take 2-4 minutes longer.
