WILTED GREENS OVER POTATOES
This recipe is representative of my Pennsylvania Dutch heritage. I remember not liking this dish as a child, but I've become fond of it over the years. -Bonnie Black, Sligo, Pennsylvania

Steps:
- In a large saucepan, bring greens and 2 cups water to a boil. Reduce heat; cover and simmer for 4-8 minutes or until tender. Drain and set aside. , In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, discarding drippings. , In a small bowl, combine flour and sugar; stir in the milk, salt and remaining water until smooth. Pour into skillet and bring to a boil; cook and stir for 2 minutes or until thickened. , Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Add the vinegar, greens and bacon; heat through. Serve over mashed potatoes.

- Place lettuce and onion in a large salad bowl; set aside. In a skillet, cook bacon until crisp (do not drain). Stir in vinegar, water, salt and pepper. Pour over lettuce and toss gently until well coated. Top with egg. Serve immediately.

- Have read chopped lettuce for 5-6 servings.and potatoes and eggs -- and chopped onions --
- Dice bacon and fry in skillet till brown -- add 3-4 tbls of sauce mixture, vinegar and water.
- Bring to a boil and keep hot.place a layer of hot potatoes, (mashed in bowl if you prefer) then a layer of lettuce, 2 sliced hard cooked eggs, and several tablespoons of hot bacon dressing --
- Add remainder of potatoes, lettuce and sliced eggs.
- Pour rest of dressing over this and serve immediately.

When we were kids, my sister and I would prepare the freshly picked lettuce for this wilted lettuce salad recipe, rinsing it several times and carefully drying it.
