DYNASTY CHOW FUNN NOODLES

Got this recipe off the back of a package of Dynasty Chow Funn Noodles pack and tweaked it according to what I had in stock (the original recipe called for pork, but I used chicken breast instead). It came out well and was a quick change of pace for a weekday family dinner. I purchased the noodles from Hows supermarket - but it can probably be found at most generic American supermarket chains.

Dynasty Chow Funn Noodles image

Steps:

  • Coat chicken with 1 tablespoon soy sauce and garlic; let stand for 20 minutes.
  • Combine remaining 2 tablespoons soy sauce, oyster sauce, potato starch and 1/3 cup water (or chicken broth) - set aside.
  • Cook noodles as package directs. Set aside.
  • Heat wok or large frying pan over medium high heat. Add olive oil to coat wok.
  • Add chicken and stir fry for 2 minutes, or until lightly browned.
  • Add green onions, carrots, cabbage, etc. Stir fry for 1 minute.
  • NOTE: Alternative to cabbage is nappa, which can be found at any Asian supermarket and some regular grocery stores.
  • Add potato starch mixture and noodles. NOTE: be sure to stir before pouring inches.
  • Cook and stir 1 minute or until sauce thickens and is hot enough to serve.
  • Remove from heat. Mix in sesame oil. Serve immediately and enjoy!

1/2 lb chicken breast, cut into very small pieces (think 1/2 of a crouton)
3 tablespoons soy sauce, divided
1 garlic clove, minced
1 tablespoon oyster sauce
4 teaspoons cornstarch (I use potato starch)
1 (20 ounce) package dynasty chow funn noodles
1 tablespoon olive oil
3 green onions with tops, chopped
3 cups green cabbage, shredded
1 teaspoon sesame oil (optional)
2 carrots, julienned (or steamed baby carrots, diced to your preference)
1/2 lb mung bean sprouts (optional)
1/3 cup water (or chicken broth)
2 -3 stalks celery, cut at an angle, into slices (optional)

  • In a small bowl, combine sliced beef, corn starch, sugar and salt. Toss to combine and set aside to marinate for 15 minutes.
  • Boil water in a wok or pot. Remove it from the heat and drop in the dried rice noodles. Allow the noodles to soften in the hot water. Follow the package instructions for timing. Some rice noodles require only a 5 minute soak, others need up to 30 minutes. Drain the noodles in a colander, rinse with cold water, drain again and set aside.
  • Combine the sauce ingredients in a small bowl: soy sauce, sesame oil and sugar. Heat the 3 tablespoons of oil in a Wok or large skillet over high heat. When hot, add the beef in a single layer. Cook the beef for 3 minutes or so, allowing it to brown on one side and then tossing it over to brown on the other, leaving the center medium rare. Transfer beef to a plate, add the onions and peppers to the pan and stir-fry for 3-4 minutes, until they start to soften. Return the beef to the pan, along with the noodles and sauce. Stir-fry everything for 2 minutes or so, tossing gently so you don’t break the noodles, until everything is piping hot. Remove from the heat, add most of the scallions and toss to combine. Serve immediately, topped with remaining chopped scallions.

  • Prepare the yellow onion, garlic, ginger, red chilies, spring onion, and yellow Chinese chives as indicated in the ‘Ingredients’ section. Place the mung bean sprouts in a bowl of water and place in the fridge for 15 minutes to revive them. Then drain into a fine mesh strainer and rinse.
  • Heat 2 teaspoons of canola oil in a large wok over high heat. Once hot, add the yellow onion and stir-fry for 30 seconds. Add the spring onion and Chinese chives and stir-fry for another 15 seconds until slightly wilted. Transfer to a clean bowl and set aside.
