DYNASTY PORK

I've made this recipe many, many times, but I don't know where I originally got it. I lost the recipe for a while, so I'm posting it here so that I won't lose it again. This is good served over rice with hot and sour soup, egg rolls or cucumber salad.

Steps:

  • Cut pork into 1/2 inch cubes.
  • Put the flour in a plastic bag and season with salt and pepper. Add pork cubes to bag and shake until cubes are well coated. Reserve any remaining flour.
  • Heat oil and butter in a frying pan, lower heat, and cook onion and garlic until tender, about 5 minutes. Remove from pan with a slotted spoon and set aside.
  • Increase heat to medium-high and add pork cubes. Cook until pork is browned on all sides. Stir in remaining flour.
  • Gradually blend in chicken broth, reserved orange syrup, vinegar, and soy sauce, and bring to a simmer. Return onion and garlic to the pan, stir, cover, and simmer gently for 1 1/2 hours, or until the pork is tender.
  • Stir in the green pepper and orange segments. Cook for 5 - 10 minutes, until the pepper slices are crisp-tender.
  • Serve over rice.

1 lb pork chop, boneless
4 tablespoons flour
salt and pepper
2 tablespoons vegetable oil
2 tablespoons margarine
1 onion, chopped
1 garlic clove, crushed
1 1/4 cups chicken broth
1 (11 ounce) can mandarin oranges, drained with syrup reserved (I use light syrup.)
1 tablespoon white wine vinegar
1 tablespoon soy sauce
1 green pepper, seeded and very thinly sliced

Pork Tenderloin with Plum Sauce image

Steps:

  • In a small bowl, stir together garlic salt, poultry seasoning, and black pepper. Season all sides of tenderloin; set aside.
  • Add white wine, plum sauce, and cornstarch to a slow cooker; whisk to combine. Place both tenderloins into cooker, and sprinkle remaining spice rub over the top.
  • Cook on HIGH for 4 hours.
  • Let tenderloin rest 25-30 minutes before slicing. Slice 1/2-inch thick slices at an angle.
  • Serve sliced tenderloin hot with plum sauce drizzled on top.

2 teaspoons garlic salt (recommended: Lawry's)
2 teaspoons poultry seasoning (recommended: McCormick)
1 teaspoon ground black pepper
1 1/2 pounds pork tenderloin, rinsed and patted dry
2 tablespoons extra-virgin olive oil
1 cup white wine (recommended: Chardonnay)
1/2 cup Chinese-style plum sauce (recommended: Dynasty)
1 tablespoon cornstarch

  • Combine the ground meat with all the marinade ingredients. Stir until any standing liquid has been absorbed by the meat. Marinate for 15-20 minutes.
  • Heat 2 tablespoons of oil in a wok over medium heat. Add the chopped green beans. Stir and spread the beans into a single layer. Cook for 30 seconds. Then stir and repeat the spreading step several times until the green beans are slightly charred, wilted, and cooked through. Turn the heat lower if needed to avoid burning. It takes about 5-8 minutes to cook the green beans this way. (To speed up the cooking, add a few drops of water each you stir, to create some steam.) Transfer the cooked green beans to a dish and set aside.
  • Now add 1 tablespoon oil to the wok, with the heat turned up to high. Add the ground meat and brown it. Don’t stir too much; give the meat a chance to brown and crisp. Once the meat has browned, reduce the heat to medium.
  • Next, add the garlic, bell pepper and chilies. Stir-fry for 1 minute. Add in the cooked green beans, ¼ teaspoon sugar, 1 teaspoon sesame oil, 1 tablespoon light soy sauce, ¼ teaspoon ground white pepper, a pinch of salt (to taste), and 2 tablespoons water. With the heat all the way up on high, stir-fry for a final 10-15 seconds and serve.
