BEST ROLLS EVER!

A yeast-roll recipe which uses self-rising flour for the most airy, delicious rolls ever! Note: the secret to these light and airy rolls is NOT punching down the dough and NOT kneading it, plus the added lift the self-rising flour gives.

Steps:

  • In a large bowl place 2 cups water and butter or margarine. Microwave about 2 minutes.
  • In another bowl, mix 1 cup sugar and eggs.
  • In a separate cup, microwave 1/2 cup water for 30 seconds. Add 1 teaspoon sugar and dissolve yeast in this.
  • Mix butter water and sugar and eggs mixture together; add salt. Mix in yeast water. Stir in 7 to 7 1/2 cups flour. Mix well and let rise in the refrigerator overnight, covered.
  • When ready to use, dump onto floured surface (DO NOT PUNCH DOWN!) and let warm to room temperature. LIGHTLY KNEAD! Only work in enough extra flour to handle.
  • Shape into rolls and place on greased sheet(s). Let rest 30 minutes, or until doubled in size.
  • Bake in a preheated 400 degree F (205 degrees C) oven until tops are golden. Brush with oil or butter immediately out of the oven.

Steps:

  • Place all ingredients except the 1/4 cup butter into bread machine in the order recommended by the manufacturer.
  • Select the dough cycle and start machine.
  • Shape dough into 20 to 24 balls and place in buttered pan (s).
  • Melt the 1/4 cup butter and brush it over the tops of rolls, saving the excess for brushing on after baking.
  • Cover and let rise in a warm place about 1 hour, or until double in bulk.
  • Bake at 375 degrees F for 15 to 18 minutes.
  • Brush baked rolls with remaining butter.
  • NOTE: This dough can also be divided into two portions and each rolled into a 12-inch circle; spread each circle with softened butter, cut into 8 wedges and roll up starting with wide end, to make crescents OR use this dough for cinnamon rolls or sticky buns.

1/2 cup warm milk
1 egg
1/3 cup butter or 1/3 cup margarine, softened
1/3 cup sugar
1 teaspoon salt

1/4 cup butter or 1/4 cup margarine

LIGHT AND FLUFFY YEAST ROLLS

After a long attempt to recreate the infamous yeast rolls of O'Charleys, I was able to get close. This is the result of a few years of trying to find out how they do it. If you've never heard of the place, I guarantee you will still LOVE these rolls! (Note: I doubled this recipe and was able to make enough to feed two very hungry families over Thanksgiving... just so you know!)

Steps:

  • Mix together the warm water and yeast packet in measuring cup. Let it get good and foamy.
  • Mix together the oil, boiling water, and sugar. Stir until sugar dissolves. Add the foamy yeast water, and then the beaten egg.
  • Sift together the flour, baking powder and salt. Add about 1 cup of dry mix to the liquids at a time, and mix very, very well.
  • Grease pan.
  • Pinch dough into balls. Keep them small because they will still rise. Let rise 2 hours, or until just past doubled.
  • Preheat oven to 400.
  • Bake for 10-15 minutes, or until golden brown on top. Brush with melted butter fresh out of the oven, and serve warm.
  • Enjoy!

  • Add a 1/4 cup warm water to a large bowl or the bowl of a stand mixer fitted with the dough hook attachment. Sprinkle in yeast, gently stir and allow to sit for 5 minutes or until foamy.
  • In a small bowl, beat 2 large eggs and set aside. Also, have 1 cup of flour set aside in a small bowl.
  • Once the yeast is ready, add the room-temperature milk, butter, and honey, 4 1/2 cups of flour, salt, and the beaten eggs to the bowl. Mix on low speed until the dough comes together.
  • Increase the speed to medium-low/medium (speed 3 or 4 on a Kitchen Aid stand mixer), and knead for 5-7 minutes. Add the extra flour as needed, a tablespoon at a time to prevent the dough from sticking to the sides of the bowl. Otherwise, knead by hand adding flour as needed. Note, you may not need all of the extra flour. The dough is ready once it is soft to the touch and no longer super sticky.
