ROASTED PORK LOIN WITH BEER SAUCE

Roasted Pork Loin with Beer Sauce image

Steps:

  • Melt 2 tablespoons butter in heavy large saucepan over medium high heat. Add onion and saute until tender and golden brown, about 15 minutes. Add garlic, cumin, cinnamon and allspice and stir 1 minute. Add beer, mustard and honey and bring to boil (sauce will foam). Remove from heat. Puree in batches in blender until smooth. Cool to room temperature. Pour into baking dish. Add pork loin; turn to coat. Cover and refrigerate 8 hours or overnight, turning occasionally.
  • Preheat oven to 375 degrees F. Remove pork from marinade; pat dry. Reserve marinade. Heat oil in heavy large skillet over medium heat. Season pork with salt and pepper. Add to skillet and brown on all sides. Transfer to baking sheet with rim. Roast in oven for 3/4 to 1 hour or until thermometer inserted into thickest part registers 155 degrees F. Transfer pork to work surface; reserve any pan juices.
  • Combine pan juices and marinade in saucepan. Bring to boil. Reduce heat to simmer. Mix butter and flour in small bowl until smooth paste forms. Add to sauce and simmer until sauce thickens. Season to taste with salt and pepper. Cut pork into slices. Pour sauce over.

1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 (12ounce) bottles beer (not dark)
1/2 cup Dijon mustard
1/4 cup honey
1 (3 1/2) pound boneless pork loin, tied
2 tablespoons vegetable oil
1 tablespoon butter, room temperature
1 tablespoon all purpose flour

These are so much easier than people think. They taste delicious and are always such a hit! You can use whatever beer you happen to have in your fridge. I prefer a rich honey wheat ale.

  • Directions.
  • 1. Stir together the beer and all of the seasonings. Pour over chops. Put in a large plastic bag. Close bag. Marinate chops for at least 1 hour.
  • 2. Remove chops; pour marinade sauce into a bowl. Put chops onto a grill at medium heat. Brush chops with extra sauce and flip every 5-10 minutes. Cook 25-30 minutes. Use your best judgement, all grills run different.
  • 3. Serve chops with green salad, rice, muffin and a chilled beer.

Emeril's Root Beer Glazed Pork Chops image

Steps:

  • Combine all ingredients of the creole seasoning thoroughly.
  • To make the glaze, combine the root beer and stock in a medium heavy saucepan. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer until reduced to a thick syrup, about 1 cup, about 50 minutes to 1 hour. Remove from heat.
  • Preheat a grill to medium-high. Preheat oven to 425 degrees F.
  • Season each chop on both sides with 1 teaspoon of ESSENCE. Place on the grill and cook for 3 minutes. Turn each chop 1/4 turn to make grill marks and cook an additional 2 minutes. Turn and cook on the second side for 5 minutes.
  • Transfer to a baking sheet. Drizzle 1 teaspoon of olive oil over each chop. Roast until cooked through and an instant-read thermometer inserted into the center reaches 150 degrees F, 12-15 minutes.
  • Place the chops on four serving plates and drizzle with glaze.

GLAZED PORK LOIN ROAST

This is a recipe that I adopted. I have used this glaze for pork loin in the past and it's wonderful. The original recipe calls for the roast to be cooked in the microwave, but I always bake mine in the oven so I have added oven instructions to the recipe.

Glazed Pork Loin Roast image

Steps:

  • Make 4 slits in fat on pork roast with tip of sharp knife, insert a piece garlic in each slit.
  • Sprinkle roast with salt.
  • Mix marmalade, mustard and thyme, spread on roast.
  • MICROWAVE INSTRUCTIONS Place roast in 16 x 10-inch cooking bag.
  • Close bag loosely with string (leave hole the size of finger in closure).
  • Place roast on microwve roast- ing rack in oblong baking dish 12 x 7 12 x 2-inches.
  • Microwave on medium-low (30%) 30 minutes; turn roast over and turn dish one-half turn.
  • Microwave until roast is done (170 degrees F on meat thermometer inserted in several different places in roast), 20 to 25 minutes.
  • Let stand 10 minutes in bag in microwave.
  • Serve with Meat Juices.
  • OVEN INSTRUCTIONS Preheat oven to 350 degrees.
  • Put the pork loin which has been prepared with garlic and salt in a roasting pan.
  • Bake at 20 minutes per pound or until a meat thermometer registers 160 degrees.
  • Spread marmalade mixture on roast during last 15 minutes of cook time.
  • Remove from oven and allow to rest for 10 minutes prior to slicing.
