EASY ELEGANT SALMON

I have been a silent observer for years, this is my first recipe posting--it was just too good not to share! Easy and delicious-two of my main criteria for a KEEPER!

Easy Elegant Salmon image

Steps:

  • Preheat the oven to 400 degrees.
  • Line a large shallow dish with foil and arrange the fillets skin side down.
  • Mix the cheese, mayonaise, lemon juice, capers, garlic powder and dried dill in a small bowl.
  • Spoon the mayonaise mixture over the fillets.
  • Bake 25 to 30 minutes or until the fillets flake easily when tested with a fork.
  • Serve immediately.

4 salmon fillets
1/2 cup grated parmesan cheese (2 ounces)
1/2 cup mayonnaise
1/4 cup fresh lemon juice
1/4 cup capers (chopped if large)
1/4 teaspoon garlic powder
1/4 teaspoon dried dill

EASY ELEGANT SALMON

Dinner-party worthy salmon that takes about 10 minutes to cook and tastes like you spent all day in the kitchen. This is the easiest dish I can think of, and despite the many dishes I try in this house, my boyfriend still thinks it is the best. The first time he tasted it, he said, "WOW, you really can cook." I would make it with some roasted potatoes and maybe some steamed broccoli.

Steps:

  • Coat salmon with mustard on both sides.
  • Finely chop dill and sprinkle on both sides of the fish. The mustard with make it stick.
  • Cook in a 450 degree oven or on a stovetop to desired doneness. I like my salmon still pretty pink in the middle, and that takes about 7 minutes. There is no need to turn if you cook it in the oven; on the stove, turn once.
  • ENJOY!

  • Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil, then coat with non-stick cooking spray.
  • In a small skillet, heat the olive oil over medium. Add the garlic and cook until fragrant and beginning to brown, about 2 minutes, watching carefully so that it does not burn. Add the balsamic vinegar, honey, mustard, salt and pepper. Whisk and simmer until the mixture thickens, about 4 minutes.
  • Place salmon skin-side down on the prepared baking sheet. Brush liberally with the glaze. Bake for 5 minutes, brush again with the glaze, then bake 5 to 10 additional minutes, until the fish flakes easily with a fork and is cooked through. Sprinkle with chopped parsley and serve. Bask in applause from your Valentine.
