BASIC CHICKEN SALAD

This basic chicken salad is a family favorite. I like to use baked thighs or breasts that have been sprinkled with basil or rosemary.

Basic Chicken Salad image

Steps:

  • Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
  • In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, and celery.

1 tablespoon lemon juice
¼ teaspoon ground black pepper
2 cups chopped, cooked chicken meat
½ cup blanched slivered almonds

HEALTHY CHICKEN SALAD

A protein-packed alternative to the normal chicken salad. This one is healthier, quick, and easy to make. I peeled my apple, personal preference, but feel free to add it unpeeled.

  • Combine Greek yogurt, cottage cheese, celery, apple, cranberries, onion, pecans, and Dijon mustard in a bowl; stir until well combined. Mix in chicken and season with salt and pepper.

  • Optional: I usually shred the pieces of chicken with a fork.
  • Mix all ingredients in large bowl. Vary amount of Miracle Whip to your preference.
  • Chill for at least two hours before serving.

  • In a small skillet, add pecans and toast on low-medium heat until fragrant and brown-ish, stirring often. Transfer to a cutting board, let cool a bit and chop coarsely.
  • In a medium bowl, add toasted pecans, chicken, celery, onion, parsley, yogurt, mayo, mustard, vinegar, salt and pepper. Stir gently to mix and adjust salt to taste if necessary.
  • Serve with greens, quinoa, brown rice or make a chicken salad sandwich with whole wheat bread.
