EASY BISCUITS

Whip up this buttery, easy biscuit recipe to serve with breakfast or dinner. The dough is very simple to work with, so there's no need to roll with a rolling pin; just pat to the right thickness. — Taste of Home Test Kitchen

Steps:

  • Preheat oven to 450°. In a large bowl, whisk flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add milk; stir just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat dough to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter., Place 1 in. apart on an ungreased baking sheet. Bake until golden brown, 10-15 minutes. Serve warm.

2 cups all-purpose flour

1/3 cup cold butter, cubed

My Grandmother taught me how to make these Southern buttermilk biscuits way before I was even a teenager. This is the only recipe I have ever used and they are always a hit.

Southern Buttermilk Biscuits image

Steps:

  • 1. Cut lard into flour using a pastry blender or two forks, and add the pinch of sugar. Add enough buttermilk to make a soft dough and knead until smooth (do not over knead as this will lend a tough biscuit).
  • 2. With floured hands pinch off a bit of the dough and roll into a ball, lightly flatten in a greased iron skillet or pan. Bake in a preheated 425 degree oven for 15-18 minutes. Brush with melted butter when removed from the oven.

3 c self rising flour
1/2 c lard
pinch sugar
3/4 c buttermilk, possibly more
2 Tbsp melted butter

FLUFFY BISCUITS

This is the best biscuit recipe I've ever tried. They always turn out perfectly, and bake up tall, light & fluffy! It's the only biscuit recipe I use now.

Steps:

  • 1. In a medium sized bowl, combine the flour, baking powder, sugar, and salt. Cut in the shortening until it resembles course crumbs. Beat the egg with milk, and stir into dry ingredients just until moistened.
  • 2. Turn out onto a well floured surface, and knead 20 times. Trust me...just do it! Roll to 3/4 inch thickness; Cut with a 2 1/2 in. biscuit cutter. Place on a lightly greased baking sheet. Bake at 450 degrees F for 8-10 minutes or until golden brown.

3 tsp sugar
1/2 tsp salt
1/2 c butter flavor shortening (you can use regular also)
2/3 c milk
1 egg

  • In a medium size mixing bowl mix 1/2 cup of fed active sourdough starter with 1 cup of the flour and one cup of room temperature whole milk.
  • Cover the bowl and place in a warm area for 4 to12 hours. The sponge will increase in size and possibly deflate depending on the amount of time you have left it to rise. If planning to bake the biscuits for dinner time you should start the sponges 8 hours before you plan to bake. The biscuits are best served hot straight from the oven.
  • After the sponge has proofed mix the sugar, baking powder, baking soda, salt and 1 1/2 cups of the all-purpose flour into the bowl of sourdough sponge with a wooden spoon. Mix the dough into the sponge until it comes together shaggy dough ball.
