PEACH DELIGHT
Colorful peach slices and refreshing lemon gelatin take center stage in this creamy dessert from Clara Hunt of Lexington, North Carolina.

- In a small bowl, cream butter and sugar until light and fluffy. Gradually add flour (mixture will be crumbly). Stir in walnuts. Press into a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 14-16 minutes or until lightly browned. Cool on a wire rack. , For filling, in a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in half of the whipped topping. Carefully spread over crust. Top with peaches. , For glaze, in a small saucepan, combine cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Gradually stir in gelatin until dissolved. Cool to room temperature. Spoon over peaches. Cover and refrigerate until firm. Dollop with remaining whipped topping.

SYLIVA'S PEACH DELIGHT
This is a wonderful summer dessert. Everyone at the family reunion has gotten to expect it. It is easy to "lighten up" by using low fat and sugar free ingredients. If you use fresh peaches instead of canned sprinkle some lemon juice over them to prevent browning. I make the 4th layer first because it takes so long for it to cool. Is better if made a day ahead.

Steps:
- Layer 1.
- Mix together first three ingredients and spread in 9'"x 12" baking dish. Bake at 375 for 15-20 minutes or until lightly browned. Cool completely.
- Layer 2.
- Mix together cream cheese , confectioners sugar and whipped topping well and spread on crust and refrigerate.
- Layer 3.
- Place peaches evenly over 2nd layer.
- Layer 4.
- Mix sugar, corn starch, and jello well. Stir in water and cook over medium heat until thick and clear. Cool completely. Pour over peaches and refrigerate.

SIMPLE PEACH DELIGHT
I saw this on an episode of 'Come Dine with Me' the other day. The measures I have given are what I have tried and are approximate since none were given on the show. Feel free to add either more brown sugar or butter as per your taste. It is served along with a scoop or two of vanilla ice cream. I didn't have ice cream on hand so I had it just like that and quite liked the earthy flavour of the brown sugar sauce.

Steps:
- Grill the peaches cut side down for about 5-10 minutes or until they are soft but not squishy.
- Melt the butter in a small saucepan and add the brown sugar. Swirl around for a few seconds till it just starts bubbling.
- Place 2 halves of the peaches cut side up on a plate and drizzle with the sauce. Serve warm with a scoop of vanilla ice cream.

FRESH PEACH DESSERT
We look forward to peach season every year just so we can have this dessert. Make sure to use sweet, ripe peaches. You could also substitute other fruits such as raspberries or strawberries, but I think fresh peaches are the best.

- Combine the graham cracker crumbs, melted butter, and 1/2 cup sugar in a mixing bowl. Mix until evenly moistened, reserve 1/4 cup of the mixture for the topping. Press the remaining mixture into the bottom of a 9x13-inch baking dish.
- Heat marshmallows and milk in a large saucepan over low heat and stir until the marshmallows are completely melted. Remove from heat and cool.
- Whip cream in a large bowl until soft peaks form. Beat in 1/3 cup sugar until the cream forms stiff peaks. Fold the whipped cream into the cooled marshmallow mixture.
- Spread 1/2 the cream mixture over the crust, arrange the peaches on top of the cream, then spread the remaining cream mixture over the peaches. Sprinkle the reserved crumb mixture over the cream. Refrigerate until serving.

- Preheat oven to 375 F. In a bowl combine crushed graham crackers and 6 tablespoons sugar. Add melted butter and stir with a fork until all crumbs are moistened. Take out 1 1/2 cup crumbs and set aside for topping.
- Press the remaining crumbs into the bottom of a 13×9 inch baking dish bake for 8 minutes. Set aside to cool.
- In a sauce pan combine water, 1 cup sugar and cornstarch, stir well and bring to a boil. Add the package of peach jello and stir to dissolve. Remove the mixture from heat and allow to cool completely, then add diced peaches, stir and pour over cooled crust. Place in the fridge until set (about 4 hours).
- Cream together powdered sugar, cream cheese and vanilla. Fold in cool whip and spread over the top of peach filling. Place in the fridge to set and top with the 1 1/2 cup reserved graham cracker crumb mixture before serving.

- In a medium saucepan, stir together the sugar, cornstarch, and salt. Add the water then bring the mixture to a gentle boil, whisking often, until it forms a thick gel-like consistency. Stir in the jello and continue to cook until completely dissolved. Remove from heat and allow to cool while you prepare the remaining ingredients.
- Combine the graham crackers, butter, and brown sugar in a bowl then press the mixture into the bottom of a 9 x 13 inch pan.
- In the bowl of an electric mixer, beat the cream cheese and powdered sugar until smooth. Beat in the whipped topping. Spread the mixture over the graham cracker crust. Top with sliced peaches.
- Once the jello mixture has cooled to room temperature or is just barely warm, pour it over the peaches. Cover and refrigerate at least 2 hours or overnight. Serve cold.
