EASY VINEGAR BEAN DIP
This is a rockin' good bean dip. I love vinegar so it was right up my alley. Awesome with chips. And I threw it together in 10 minutes! Got this off of an Aldi Tortilla Chip bag. Modified it slightly. It called for 2 jalapenos, but one was enough for me. Also called for 1 jar of pimentos - don't think it needs it for taste, just for color.

Steps:
- Bring sugar, apple cider vinegar, salt and pepper to a boil.
- Cool slightly.
- Drain and rinse black beans and pinto beans.
- Combine beans, corn, green pepper, onion, and jalapeno.
- Pour sauce over the bean mixture.
- Refrigerate to cool.
- Makes a ton but will keep for up to 10 days as the vinegar acts as a preservative.

WHITE BEAN DIP
Steps:
- Combine the beans, olive oil, vinegar, garlic powder, some salt and pepper and 2 tablespoons cold water in a food processor and blend until smooth. Transfer to a serving bowl, garnish with a drizzle of olive oil and sprinkle with the crushed red pepper. Serve with pita chips.

BLACK BEAN DIP

- Puree two 14-ounce cans black beans (drained and rinsed), 2 minced garlic cloves, 1/4 cup each olive oil and lemon juice, 1 tablespoon white wine vinegar, 1 teaspoon ground cumin and a pinch each of salt and pepper in a food processor until almost smooth. Let sit 15 minutes before serving.

- In a small pan combine all ingredients and heat over a very low flame, stirring frequently, until cheese is melted.
- If using canned black beans you'll need to spice up the dip with a bit of cumin, some salt and pepper and garlic.
- Serve with tortillas or chips, avacado and sour cream go well too!

- Spread the refried beans in a layer in the bottom of a 9 inch square baking dish. In a small bowl, stir together the taco seasoning mix and cream cheese. Spread the mixture over the refried beans. In a separate bowl, toss together the tomatoes, green onions, cubanella pepper, black beans and navy beans. Spread over the layer of cream cheese. Cover and refrigerate for at least 4 hours before serving to blend the flavors.
