GREEK SALAD WITH GREEN GRAPES

Greek Salad with Green Grapes image

Steps:

  • In a large bowl, combine first eight ingredients. , In a small bowl, whisk the vinegar, yogurt, honey, dill, salt and pepper. Gradually add the oil in a steady stream until combined. Pour over salad; toss to coat.

1 package (5 ounces) spring mix salad greens
3-1/2 cups torn romaine
1 large cucumber, chopped
1 cup green grapes
1/2 cup cherry tomatoes, halved
1/2 cup chopped walnuts
1 cup crumbled feta cheese
1 can (3.8 ounces) sliced ripe olives, drained
GREEK YOGURT VINAIGRETTE:
3/4 cup white wine vinegar
2 tablespoons plain Greek yogurt
2 tablespoons honey
2 teaspoons snipped fresh dill
1/8 teaspoon salt
1/8 teaspoon pepper
7 tablespoons olive oil

GREEN GRAPES WITH FETA CHEESE & HONEY

Serve this for dessert or arrange it on a leaf of butter lettuce as a salad. I made this and served it over baby spinach leaves. I'm not a big fan of feta cheese, for me a little goes a LONG way. So I made an extra side of the dressing and poured it over the fruit, and used freshly grated parmesan cheese instead. From Eating Well magazine... NOTE: Prep time is cooking time.

Steps:

  • Place feta in a small bowl.
  • Drizzle with oil and honey. Add pepper and toss gently.
  • Shortly before serving, halve grapes lengthwise.
  • Gently toss grapes and pear slices.
  • Scatter the feta over the fruit.
  • Garnish with basil.

Baked feta with sumac & grapes image

Steps:

  • Put the red onion in a bowl and add the vinegar, sugar and a pinch of salt. Massage everything together with your fingers for 1 min - this will slightly pickle the onions. Heat oven to 200C/180C fan/gas 6.
  • Scrunch up a sheet of baking parchment and use to line a gratin dish. Add the grapes, drizzle over 1 tbsp olive oil, 1 tsp sumac, most of the dill and some seasoning, then toss everything to coat. Nestle the blocks of feta in among the grapes, then scatter over the onions and any of the pickling vinegar, the remaining oil and sumac. You can now leave in the fridge for up to 24 hrs, or bake straight away.
  • Bake for 30-35 mins until the feta is browning and the grapes look juicy. Scatter over the remaining dill, then serve in the middle of the table with bread for scooping up the cheese, grapes and juices.

Roasted Feta With Honey image

Steps:

  • Preheat the oven to 400 degrees. Select a small oven-to-table earthenware dish or a small ovenproof sauté pan lined with aluminum foil to help transfer the cheese to a plate after roasting. Place the feta in the dish and cover with the olive oil. Bake until the cheese is soft and springy to the touch but not melted, about 8 minutes.
  • Preheat the broiler. Heat the honey in the microwave or over a pan of simmering water until it is fluid enough to be spread with a pastry brush and then paint the surface of the feta with it. Broil until the top of the cheese browns and just starts to bubble. Season to taste with black pepper. Serve immediately with pita wedges and, if desired, sliced heirloom tomatoes, roasted beets, nuts or pickled vegetables.

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the sesame seeds in a shallow dish and brush the block of feta all over with the honey. Carefully press the honey-coated feta into the sesame seeds, turning so that it's well crusted with seeds.
  • Put the feta in a baking dish (it should fit snugly), then sprinkle over the oregano and a pinch of sea salt. Drizzle with some olive oil. Bake for 15-20 mins until the feta is soft, then drizzle with a little extra honey and serve with the pitta breads on the side.
