OLD BAY MARINATED AND GRILLED SHRIMP

These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

Old Bay Marinated and Grilled Shrimp image

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Serve the shrimp with the reserved lemon wedges and hot sauce.

Steps:

  • Combine evaporated milk, grits, chicken broth, and butter in a saucepan over medium-high heat; bring to a boil. Cook, stirring constantly, until thickened, 5 to 7 minutes. Add Cheddar cheese and stir until incorporated. Remove from the heat and set aside.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp and browned, about 3 minutes per side. Drain bacon slices on paper towels and chop when cool enough to handle.
  • Add bell peppers to the bacon grease. Add shrimp and taco seasoning. Cook and stir until peppers are heated through and shrimp are bright pink on the outside and the meat is opaque, 3 to 5 minutes. Stir in chopped bacon.
  • Place a dollop of grits in each bowl and top with shrimp mixture and hot sauce.

Shrimp Empanadas image

Steps:

  • Dough:
  • Mix warm lard, salt, vinegar, and 2 cups lukewarm water in a large bowl to combine. Gradually add 6 cups flour, mixing with a sturdy wooden spoon or your hands until a shaggy dough forms.
  • Transfer dough to a lightly floured surface and knead until mostly smooth and no dry spots remain, about 2 minutes. Wrap in plastic and chill at least 2 hours.
  • Filling and assembly:
  • Cut shrimp in half lengthwise, then finely chop (it's okay if some pieces get pasty). Set aside.
  • Heat 2 Tbsp. olive oil in a large saucepan over medium-high. Add reserved shrimp shells and heads (if using) and cook, smashing down on shells and heads occasionally with a wooden spoon, until pink and bottom of pot begins to brown, about 5 minutes. Add wine and cook until reduced by half, about 2 minutes. Add 2/3 cup water; bring to a boil. Reduce heat to low and simmer until reduced by one-third, 6-8 minutes. Let cool. Strain stock through a fine-mesh sieve into a heatproof measuring glass, pressing on solids; discard solids.
  • Wipe out pan, add remaining 2 Tbsp. olive oil, and set over medium heat. Cook onion, stirring often, until softened but without taking on any color, about 5 minutes. Add garlic and cook, stirring, until softened, about 3 minutes. Add shrimp stock and reserved shrimp and cook, stirring occasionally, until most of the shrimp have turned pink, about 2 minutes. Remove from heat. (Shrimp will continue cooking in the residual heat.) Mix in butter, cilantro, lemon zest, and red pepper flakes; season with salt. Let cool 20 minutes, then transfer to a medium bowl. Chill at least 1 hour before using.
  • Divide dough into 6 equal pieces. Cover all but 1 piece with plastic wrap and chill. Roll out remaining piece of dough to a 14" round about 1/16" thick.
  • Using cutter, punch out 6 rounds from dough. Place 1 Tbsp. filling in the center of each and brush water halfway around edge of each round. Fold dry side of dough up and over filling to create a semicircle. Pinch edges to seal; crimp. Transfer to a parchment-lined rimmed baking sheet. Repeat with remaining dough and filling. Chill 20 minutes.
  • Meanwhile, pour vegetable oil into a large heavy pot fitted with thermometer to come halfway up sides. Heat over medium-high until thermometer registers 350°F. Working in batches and adjusting heat to maintain temperature, fry empanadas, turning often, until deep golden brown, 5-7 minutes per batch. Transfer to a wire rack set over paper towels; let cool 2 minutes before serving.
  • Do ahead:
  • Dough can be made 2 days ahead. Keep chilled. Filling can be made 1 day ahead. Keep chilled.

1 Tbsp. kosher salt
1 Tbsp. red wine vinegar
6 cups all-purpose flour, plus more for surface
Filling:
1 lb. small shrimp, preferably head-on, peeled, deveined, shells and heads reserved
4 Tbsp. extra-virgin olive oil, divided
1/3 cup dry white wine
1 medium onion, very finely chopped
4 garlic cloves, thinly sliced
6 Tbsp. chilled unsalted butter, cut into pieces
2 Tbsp. finely chopped cilantro
1 tsp. finely grated lemon zest
1/2 tsp. crushed red pepper flakes
Kosher salt
Vegetable oil (for frying; about 8 cups)

A 4 1/2"-diameter cookie cutter; a deep-fry thermometer

ED'S SOUTH OF THE BORDER MARINATED SHRIMP

This shrimp appetizer is fantastic! Cold and refreshing with the zingy flavors of lime, cilantro and a kick of jalapeno make this the perfect hot weather hors d'oeurve. The amount of peppers you add are up to you but this recipe was made with kids in mind (Southern kids who like a little spice in their food!). Try this with Margaritas or ice cold beer (lemonade for the kids)! Most of the cooking time is chilling time in the fridge. Next time we'll try grilling the shrimp instead of boiling for another flavor dimension.

Ed's South of the Border Marinated Shrimp image

Steps:

  • Bring a large pot of heavily salted water to boil and add the shrimp.
  • Bring to a boil again and cook for 3 minutes.
  • Drain the shrimp and rinse to stop the cooking.
  • Peel as soon as the shrimp are cool enough to handle.
  • Mince the onion, garlic, and jalapenos, chop the cilantro and add to the olive oil in a large bowl.
  • Squeeze the limes and add to the bowl along with the shrimp and sugar, salt and pepper.
  • Cover and refrigerate for a few hours.
  • Serve with toothpicks and plenty of napkins.

Steps:

  • In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
  • Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

Steps:

  • Dry cleaned shrimp with paper towels.
  • Heat butter in a large skillet over medium heat.
  • Cook garlic in melted butter for 30 seconds.
  • Add shrimp and cook 2 minutes more, stirring occasionally.
  • Stir in the tequila, lime juice, salt and red pepper flakes.
  • Cook 2 minutes more or until most of the liquid is gone and shrimp looks pink and glazed.
  • Add cilantro, stirring over heat for a few more seconds.
  • Serve over hot rice.

  • Bring a large pot of water to boil (salted if preferred). Add the shrimp and cook until pink, about 3 minutes. Transfer to a large bowl of ice water. Drain and place shrimp in a large bowl.
  • In a medium-sized bowl, whisk together the next 9 ingredients. Pour some of the marinade over shrimp, gently tossing to coat.
  • In a large shallow dish, layer shrimp, lemon slices and onion. Pour remaining marinade over shrimp. Cover and refrigerate at least 6 hours.
