EGG FREE - SPAGHETTI PIE (BAKED PASTA)
I have a severe egg allergy (my face blows up like a pumpkin). I came up with this recipe as I wanted to share a Spaghetti Pie with my family and eat it too! Use your own spaghetti sauce recipe OR a bottle, just remember to add 1/2 a cup of the spaghetti water to the "cheese sauce" so it spreads well, I use a ground parmesan cheese as it was easier to measure. Turkey mince would work well here too.

Steps:
- Fry the meat and onions together, break up the beef so there are no lumps.
- Add the garlic and cook until fragrant (about 40-60 seconds).
- Add the pasta sauce, tomatoes, basil, oregano, sugar and salt. Reduce heat and simmer while the pasta is cooking.
- Prepare the pasta BUT, slightly undercook as it will be baked and will continue to cook in the oven,.
- Prepare the cheese sauce by adding the softened cream cheese (about 20 seconds in the microwave will do it), the sour cream, parmesan cheese and the parsley or spring onions and mix.
- Spray a 10 cup baking dish with oil, place the almost cooked pasta on the bottom.
- Cover with spoonfuls of the cheese sauce, place a spoonful in each corner and continue until all used and the pasta is covered (if not covered, spread out).
- Top with the prepared meat sauce and finally the mozzarella cheese.
- Bake at 180oC (360oF) for 30 minutes.
- Best served with a crispy salad and fresh crusty bread.

- Preheat oven to 350°. Cook spaghetti according to package directions for al dente; drain., In a large skillet, cook beef, onion and green pepper over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Stir in tomatoes, tomato paste, seasonings and sugar., In a large bowl, whisk egg whites, melted butter and Parmesan cheese until blended. Add spaghetti and toss to coat. Press spaghetti mixture onto bottom and up sides of a greased 9-in. deep-dish pie plate, forming a crust. Spread cottage cheese onto bottom; top with beef mixture. , Bake, uncovered, 20 minutes. Sprinkle with mozzarella cheese. Bake until heated through and cheese is melted, 5-10 minutes longer. Let stand 5 minutes before serving.

A recipe my wife has prepared from leftovers at family Spaghetti Dinner. A very quickie meal during the work week. Have no Idea where it came from her family. They're all Norwegians or Germans. Hmmmmmmm somewhere it popped in! Easy, simple, and tasty.

Steps:
- Cut spaghetti into aproximately 3" to 4" pieces.
- Beat eggs in a large bowl, add spaghett into and mix well, add parmesan cheese and blend all.
- Grease a glass 8" x 11" baking dish. Layer 1/2 of mixture on bottom, layer 1/2 of mozzarella cheese on top, layer rest of spaghetti and top with balance of mozzarella.
- Bake, uncovered, in preheated 325 degree oven for 40 minutes.
- Remove, slice into squares. As you serve top with 1-2 cups sauce, and sprinkle a little green or parmesan cheese on top to garnish. Reheat for lunch tomorrow.

CACIO E PEPE PIE
This decadent version of spaghetti pie has all the best parts of cacio e pepe (Pecorino! black pepper!) in a hearty, extra-cheesy, baked form.

- Preheat oven to 375°F. Lightly spray an 8" springform pan with nonstick spray. Wrap bottom tightly in foil to prevent any leaks and place on a rimmed baking sheet.
- Mix Fontina, half-and-half, 4 oz. Parmesan, 1 Tbsp. pepper, and 1 1/2 tsp. salt in a large bowl that can rest on rim of pasta pot without falling in.
- Fill pasta pot with 5 quarts water and add remaining 1/2 cup salt. Bring to a boil and cook pasta 4 minutes shy of package directions. Drain.
- While pasta is cooking, place bowl with cheese mixture over pot and whisk constantly until cheese is melted, 3-4 minutes. Remove from heat. Whisk in ricotta, then eggs and 2 Tbsp. oil. Add drained pasta to bowl and toss to coat.
- Transfer pasta to prepared pan, pressing down to compact lightly. Pour any leftover cheese mixture evenly over. Using tongs or a fork, pull up a few strands of pasta so they form loops just above surface of pie (these will get browned and give texture to the top).
- Bake pasta until cheese is bubbling and pie is golden brown on edges and sides, 35-45 minutes. Let cool 10-15 minutes before removing sides of pan. Slide a thin spatula underneath and around pie to help release it from pan, then transfer to a platter or cutting board. Top with Parmesan, a drizzle of oil, and a few cranks of pepper. Slice into wedges and serve warm.
