PAINTED EGG COOKIES

Steps:
- Preheat oven to 325 degrees. Whisk together flour, baking powder, and salt. In another bowl, beat butter, sugar, and vanilla-bean seeds on medium until pale and fluffy, 4 minutes. Mix in egg and vanilla extract. With mixer on low, gradually beat in flour mixture. Bring dough together with hands. Flatten into a disk and wrap in plastic. Chill 30 minutes.
- Roll out dough 1/4 inch thick on a lightly floured surface. Cut out shapes with egg-shaped cutters (we used 1- to 3-inch-long ones); reroll and cut scraps. Arrange on parchment-lined baking sheets. Chill 15 minutes.
- For each color, place an egg yolk in a bowl. Add 1 drop food coloring; stir to combine. Add water a little at a time to achieve a paler shade, if desired. Brush over tops of egg shapes. Bake until edges turn golden, about 13 minutes for 1-inch shapes; up to 17 minutes for 3-inch shapes. Let cool on sheets on wire racks.

Steps:
- Preheat oven to 375°F.
- Put the hard cooked egg yolks through a wire sieve. (To do this easily, press them through with your fingers). Add the raw egg yolks and mix well.
- In a large bowl, cream the butter and sugar; add the egg mixture and mix thoroughly. Stir in the flour, cardamon, and lemon zest; blend well. Chill dough for 1 hour.
- Roll out small portions of the dough at a time on a lightly floured board to 1/8" thickness. Cut with a 2 1/2" cookie cutter. Brush with egg white, then sprinkle the tops with the sugar and almond mixture.
- Place on ungreased cookie sheet.
- Bake for about 10 minutes, or until delicately browned.

EGG YOLK COOKIES
I love making homemade angel food cakes and meringues, but unfortunately hate the waste of egg yolks. Recently, my range decided not to cooperate on my daughter's birthday, so I attempted three times in one day to make her 'promised' angel food cake...resulting in 36 egg yolks left over...YIKES! I made a ton of my Homemade Neverfail Egg Noodles, but I could only stand to have so many noodles made ahead, so I was on a mission. This is the recipe I found, then modified, from one of my Open Line Cookbooks (a radio station recipe program I loved listening to with Mom as a young girl). The recipe does not require chilling prior to rolling and baking, but I prefer to anyway, and in between cookie sheets. I like to double this recipe, as well as most cookie recipes to be quite honest. I think this would also work well pressed out as a cookie dough for a dessert pizza, although I haven't tried that yet. I have also used frozen egg yolks with great success, so there is no need to take on both an angel food cake project or meringue project and cookies in the same day. These also freeze well after baking; I haven't tried freezing them before baking yet. I hope you find this recipe as useful as I do!

Steps:
- Cream butter and sugar until fluffy.
- Separately, beat egg yolks and add extracts and salt.
- Add beaten egg yolk mixture to creamed butter and sugar.
- Blend well.
- In a separate bowl, whisk together dry ingredients (flour, baking soda and cream of tartar).
- Add dry ingredients to creamed butter, sugar and egg mixture, mixing until well blended.
- Form into balls about the size of a walnut.
- Roll balls in sugar, place on greased cookie sheet or parchment lined cookie sheet, and slightly flatten.
- Bake at 350 degrees F for 8 to 10 minutes, depending on desired softness/crispness.

- Cream butter or margarine and shortening; gradually add sugar, beating until light and fluffy. Add egg and vanilla; beat well.
- Combine flour and salt; stir into creamed mixture. Divide dough in half; cover and chill at least 1 hour.
- Roll one portion of dough to 1/8 inch thickness on a lightly floured cookie sheet. Cut with assorted cutters; remove excess dough. Paint assorted designs on cookies with Egg Yolk Paint, using a small paintbrush. Bake at 375 degrees F (190 degrees C) for 9 to 10 minutes. Remove to wire racks to cool. Repeat procedure with remaining dough.
- To Make Egg Yolk Paint: Combine egg yolk and water; mix well. Divide mixture into several custard cups; tint as desired with paste food coloring. Cover until ready to use. If paint thickens, add a few drops of water and mix well. Yield: 1 1/2 tablespoons.

- Press hard-cooked egg yolks through a fine-mesh strainer into a bowl. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in cooked egg yolks and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk; wrap. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. - Stir together egg yolk and water. Divide mixture among several bowls. Mix a little paste food coloring into each.
- Use a small clean watercolor paint brush to paint various colors onto unbaked cutout cookies. Clean the brush between colors using plain water. Put only a small amount of paint on the brush. If the Egg Paint thickens while you're working with it, stir in a little water, a drop at a time. If using more than one color, leave a narrow strip of cookie between painted areas so the colors don't run together. If you want a marbled effect, paint a small amount of one color on top of another.
- Its important to use egg yolk paint only before the cookie dough is baked so that the raw egg is cooked during the baking step. Bake as cookie recipe directs.
