Moist tasty bread. Easy to prepare. Can also be baked in a 350 degree oven for 45 minutes.If just placed on dough cycle.

1 1/4 cups warmed buttermilk
2 tablespoons softened butter
3 cups all-purpose flour
3 tablespoons sugar
1 teaspoon salt
2 teaspoons yeast

BREAD MACHINE BUTTERMILK AND HONEY WHEAT BREAD

This is one of my favorites. The recipe came from Eagle Mills. If you don't have buttermilk, you can substitute 1 cup milk plus 1 teaspoon cider vinegar, and let it sit about 10 minutes before using. You can also add 4 tbs. buttermilk powder to the dry ingredients and substitute water for the buttermilk. I have also used plain all-purpose flour with excellent results.

  • Put all ingredients in bread machine for 1 1/2 lb.
  • loaf in the order suggested by the manufacturer.
  • Bake using whole wheat cycle.

1 cup buttermilk, plus
1 tablespoon buttermilk (at room temperature)
2 tablespoons honey
1 tablespoon butter or 1 tablespoon margarine, at room temperature, cut into small pieces
1/2 teaspoon salt
1/4 teaspoon baking soda
2 1/2 cups bread flour
1/2 cup whole wheat flour
1 teaspoon yeast

Wheat Germ Bread image

Steps:

  • In a small measuring cup add warm water, yeast and honey, stir well,set aside for 10 minutes until foamy.
  • In a skillet toast wheat germ, on medium heat for 5-8 minutes, stirring constantly, cool.
  • Either in a food processor or stand mixer add flour, whole wheat flour, cornmeal, salt and cooled wheat germ.
  • Add olive oil and proofed yeast mix well. Mix until a smooth ball forms.
  • Take out of mixer and knead on slightly floured board (4-5 minutes).
  • Put dough in a large greased bowl and cover with a clean towel.
  • Let rise in a warm place for 60 minutes until double in bulk.
  • Punch down and form into loaf, placing in a well greased 9x5-inch loaf pan.
  • Let rise for another 30-45 minutes.
  • Bake at 375°F for 25 minutes.
  • Take out of oven brush with butter, let cool on wire rack.

Steps:

  • Combine the yeast, whole wheat flour, all purpose flour, baking soda, salt, honey, oil, and buttermilk into pan of a bread machine.
  • If baking in bread machine use medium temperature setting.
  • If baking in an oven, use manual or dough cycle to knead dough. Remove from bread maker, and place in a greased loaf pan. Let rise until doubled in size. Bake in a preheated 350 degree F (175 degree C) oven for 25 minutes, or until bottom of loaf sounds hollow when tapped.

  • Select the DOUGH cycle and press START. Open the lid or take a peek in the first five minutes. Be sure paddles are engaged and dough is coming together into a soft mass.
  • Check on the consistency of the dough after about 15 minutes. The dough should stick to the side of the bread machine pan, then pull away cleanly. If the dough is too wet and won't pull away, add another tablespoon of flour. If the dough is too dry and won't stick at all, add 1 tablespoon of liquid. Wait for whatever you added to incorporate into the dough and reassess the situation before adding more.
  • When the DOUGH cycle has finished, check the dough to be sure it has risen to double the original size. If so, remove the dough to a lightly-floured surface for shaping. If your kitchen is cold and the dough has not doubled in size, leave it in the pan until it does. Then remove it for shaping. If your kitchen is warm, check the size of the dough before the DOUGH cycle completes. The dough may need to be removed and shaped early to avoid overproofing.
