EGGNOG BREAD
Someone always asks for the recipe when I make this rich bread for the holidays or give as gifts. It's easy to make and quite delicious. The bread is a traditional part of the season at my home here in the foothills of the Blue Ridge Mountains. -Ruth Bickel, Hickory, North Carolina

- Preheat oven to 350°. Grease a 8x4-in. loaf pan., In a large bowl, beat eggs, sugar and melted butter until well blended. In another bowl, whisk flour, baking powder and salt; beat into egg mixture alternately with eggnog, beating well after each addition. Fold in cherries, pecans and raisins. , Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack to cool.

EGGNOG FRUIT BREAD

- In a large bowl, beat eggs and oil. Beat in the sugar, extracts and eggnog. Combine 2-1/2 cups flour, baking powder, salt and nutmeg; gradually add to egg mixture. Toss the fruit with remaining flour; stir into batter. Fold in walnuts. , Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease bottom only of a 9x5-inch loaf pan, or three 3x5-inch loaf pans.
- Blend together the eggs, eggnog, rum extract, sugar, vanilla and butter.
- Sift together the flour, baking powder, salt and nutmeg. Add to eggnog mixture and stir just enough to moisten; pour into prepared pan or pans.
- Bake large loaf for 40 to 60 minutes, or until a tester inserted in the center comes out clean. Breads baked in the smaller pans require 35 to 40 minutes. Cool for 10 minutes, and remove from pan. Cool completely, wrap tightly in plastic wrap or foil, and store in refrigerator.

CREAMY EGGNOG FUDGE
This eggnog-flavored fudge is made with white chocolate, eggnog, some nutmeg, and cinnamon. It's a very rich fudge worth every nibble!

- Grease a 9 inch square pan and set aside.
- Combine the sugar, butter, eggnog, nutmeg, and cinnamon in a large saucepan. Bring to a boil, stirring occasionally to melt the butter. Once the mixture reaches a rolling boil, stop stirring, and clip a candy thermometer onto the pan.
- Heat mixture to 235 degrees F (113 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
- Remove the pan from the heat and stir in the white chocolate pieces, marshmallow cream, vanilla, and walnuts. Beat the mixture with a wooden spoon until fluffy and it starts to lose its gloss. Spoon into the prepared pan, spreading evenly. Cool completely, then cut into small squares for serving.

Steps:
- 1. Preheat the oven to 350. If you're using paper pans there's no need to grease them. If using ceramic or metal, grease bottom and the sides of 2- 7x3 inch baking loaf pans.
- 2. In a mixing bowl add the flour, baking powder, salt, nutmeg and sugar. Stir until combined and make a well in the middle.
- 3. In another bowl lightly beat the 2 eggs and mix them with the melted butter and vanilla extract.
- 4. Pour the wet ingredients over the dry ones and stir just until combined.
- 5. Pour the batter into the prepared pans, sprinkle the chocolate chips on top and bake in preheated oven for 40 minutes or until a toothpick inserted in the middle comes out clean.
- 6. Cool slightly in the pan before removing.
EGGNOG CANDY BREAD
Butter rum and eggnog flavours make for a wonderful aroma while this is baking and a wonderful taste when it's being eaten.

- Beat first 6 ingredients together well in large bowl.
- Add flour, baking powder and salt. Stir until just moistened.
- Put unwrapped hard candies into resealable plastic bag. Seal. Pound until candies are broken into small pieces. Reserve about 1/4 of candy pieces. Add remaining candy pieces to batter. Stir gently. Turn into greased 9 x 5 x 3 inch loaf pan. Sprinkle reserved candy pieces over top. Bake in 350°F oven for 50 to 55 minutes until wooden pick inserted in centre comes out clean. Let stand in pan for 10 minutes before turning out onto wire rack to cool. Cuts into 18 slices.
