EGGS IN HEAVEN

I've seen recipes on cooking sites for 'Eggs in Purgatory', but I'm not too keen on serving fried eggs with potato pancakes and tomato sauce! The sound of that just didn't appeal to me, so I decided to make it in a way that I know my family would love. This is a potato pancake with a creamy cheese sauce and a fried egg. Well, it worked just fine because my family loved it!

Eggs in Heaven image

Steps:

  • Place 1/4 cup of the warm mac & cheese sauce in the center of a plate.
  • Place the warm potato pancake ontop. Sprinkle with 1/4 of the shredded cheddar cheese.
  • Now place the fried egg ontop of the shredded cheddar. Serve warm.

4 large potato pancakes - about 4 inches in diameter
1/2 cup(s) cheddar cheese, shredded
1 cup(s) of your favorite mac & cheese sauce
4 large fried eggs - over easy

I saw this demonstrated on "The Chew" cooking show. This dish looked so delicious I just had to try it -guess what it was delicious and so simple to make.My family wants it to be our weekend breakfast meal. One bite of these delicious eggs and you'll be in heaven!

Southern Grits and Eggs (Eggs in Heaven) image

Steps:

  • 1. Heat oven to 350^' Butter a cast iron skillet,or a 9x13-inch baking dish. Set aside. In a 3 quart heavy bottomed saucepan, bring water, milk and salt to a boil. Gradually stir in grits and reduce heat. Simmer for 20 minutes or until thick and smooth and not watery. Whisk to prevent lumps. Stir in butter and cheese Pour grits into skillet or baking pan. Make 6 depressions in grits mixture about 2 inches apart with the back of a spoon sprayed with oil spray. Carefully break one eggs into each depression. Sprinkle with fresh ground black pepper. Bake uncovered for 10-15 minutes or until eggs are at desired doneness. Garnish with the chopped parsley. Serve hot with grilled ham steak to share.

1 c stone ground hominy grits or quick grits (i used the quick grits)
1 1/2 c water
1 c whole milk
1 tsp salt
4 Tbsp butter
1/2 c shredded cheddar cheese (i used 3/4 cup)
6 large eggs
pepper to taste
1/4 c chopped parsley
1 large ham steak

Steps:

  • Preheat oven to 325°. Place 6 eggs in silicone muffin cups. Bake 25-30 minutes; remove from oven. Rinse eggs in cold water and place in ice water until completely cooled. Drain and refrigerate. Remove shells; if desired, cut eggs before serving.

Deviled Eggs - Also Known as Oblong Heaven image

Steps:

  • Shell the eggs, cut them in half lengthwise, and remove the yolks carefully. (We don't want messy broken whites, do we?) Put the yolks in a bowl and mash with a fork. Add all the remaining ingredients (except the chives) to the yolks and mix well. Place a dollop of the yolk mixture in the indentation in each of the egg white halves and garnish with chopped chives.
  • Here's a hint: Cut your chives up with scissors instead of a knife. The process will go much more quickly.
  • Getting those hard-boiled eggs out of the shell can be quite a chore. I've found that the best way begins with the cooking. Boil your eggs for exactly ten minutes, then transfer them to a bowl of cold water immediately and leave them there for at least another ten minutes. This will stop the cooking of the eggs and ensure the easy removal of the shells. Once your eggs have cooled, take one and crack the shell, starting at the large end, where the little pocket of air usually is, and continue all the way around. Then, under running water, find or make a small tear in the membrane beneath the shell and let the water run between the membrane and the egg. The water will do most of the work for you and the egg will practically peel itself!

1 teaspoon dry mustard
1 1/2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
1/4 cup grated sharp cheddar cheese
Chopped fresh chives, for garnish
