EGYPTIAN LENTIL SOUP

This is a traditional hearty soup usually eaten in the winter time, but can be eaten any time of the year. My recipe has absolutely NO FAT! Enjoy!

Egyptian Lentil Soup image

Steps:

  • Place 3 cups water, lentils, tomato, carrot, onion, garlic, and chicken bouillon in a stockpot over medium heat; cook until vegetables and lentils are softened, 20 to 25 minutes. Remove from heat and cool to lukewarm.
  • Blend vegetable and lentil mixture with an immersion blender until smooth. Stir 1 cup water, cumin, sea salt, pepper, and coriander into soup; heat over medium heat until warmed.

1 cup red lentils
1 roma tomato, quartered
1 carrot, quartered
1 small onion, quartered
4 cloves garlic, quartered
¼ cube chicken bouillon (such as Maggi®)
1 cup water
2 teaspoons ground cumin
½ teaspoon sea salt
½ teaspoon cracked black pepper
¼ teaspoon ground coriander

HEARTY VEGETARIAN LENTIL STEW

A hearty vegetarian lentil stew that's delicious, inexpensive, and goes a long way. Even if you're not a vegetarian, it makes a fulfilling, delicious meal. A nice crusty bread goes well on the side. Great to bring to work. This is a bulk recipe that keeps well refrigerated and reheats very nicely. Don't be afraid to scale down if need be.

Steps:

  • Bring water and lentils to a boil in a large saucepan. Cover, reduce heat to low, and simmer until tender, 15 to 20 minutes. Increase heat to high, add wine, and let it sizzle and bubble for 1 minute. Reduce heat to medium-low, cover, and simmer for 3 minutes.
  • Stir in carrots, celery, vegetable broth, diced tomatoes, onion, bell pepper, cabbage, tomato paste, brown sugar, curry powder, garlic, onion powder, salt, pepper, and cumin. Cook, stirring frequently, until flavors are well blended and vegetables are tender, 45 minutes to 1 hour.

EGYPTIAN LENTIL STEW

This is a great recipe to make in the winter - it is a hearty lentil stew, takes about an hour to make (no matter how much you increase the portions), and goes with most other foods. Also, it is really really easy to make, and can usually be made with things that you have in the house already. Can be served cold or hot, but it is much better hot than cold. This recipe comes from the Middle East.

Steps:

  • Saute the onions in a large pot with the olive oil until the onions are golden.
  • Add the water, the lentils, the (optional) soup mix, the Cumin, the Coriander, and the juice from the lemons.
  • Cook on medium heat for 1 (one) hour or until the lentils are done, stirring every few minutes.
  • Take the pot off the heat, give it a stir, and serve!

  • In a large saucepan, bring the lentils, water and bouillon to a boil. Reduce heat; simmer, uncovered, for 20 minutes. , Stir in the remaining ingredients. Return to a boil; reduce heat and simmer 20-30 minutes longer or until lentils and vegetables are tender.

Egyptian Red Lentil Soup image

Steps:

  • Add the first 5 ingredients to a large pot; cover and bring to a boil.
  • Lower the heat and simmer 15-20 minutes or until the lentils and veggies are tender.
  • Take pot from stove burner and set aside.
  • In a small saucepan, add the oil; warm over low heat until the oil is hot but not smoking.
  • Add in the cumin, turmeric, and salt; cook and stir constantly for for 2-3 minutes or until the cumin has released its fragrance (be careful not to scorch the spices).
  • Set spice mixture aside for 1 minute to cool.
  • Stir spice mixture into the lentil mixture; add cilantro, stir to combine.
  • You can puree the soup, in batches, in a blender OR you can use an immersion blender and blend to desired texture (I like to leave it a little chunky).
  • Add in lemon juice; stir to combine.
  • Rewarm soup in soup pot; season if needed with salt/pepper.

8 garlic cloves, peeled and left whole
1 tablespoon canola oil

  • Make the Carrot Dukkah Toasts • Place the slices of bread directly on an oven rack for 3-4 minutes to toast them. • Heat 1 tbsp. olive oil in a small pan over medium-low heat. • Using the broad side of a knife, crush the hazelnuts. • Add the hazelnuts, sesame seeds and remaining spice mix to the pan. Cook, stirring frequently, until the hazelnuts and sesame seeds are toasted, 2-3 minutes. • Transfer the carrots from the oven back to the medium bowl used earlier and mash with a fork. • Spread some of the mashed carrot mixture on each toast and sprinkle with the toasted nuts/seeds.
  • Bring It All Together • Rinse and roughly chop the mint. • In a small bowl, mix the yogurt and half of the mint. Add a large dollop on top of each carrot Dukkah toast. • Evenly divide the stew between two bowls and garnish with the remaining mint. Serve with Carrot Dukkah toasts on the side!
