"ELMER'S" SUMMERTIME SWEET ONION SALSA

Picked up this recipe at a local "Elmer's" restaurant. It sounds so good and easy to prepare. They were giving out the recipe free so I guess it's OK to post here. I haven't tried it yet, but the card said: It takes only minutes to produce the best-tasting summer salsa ready for dipping, topping, and summertime fun. Cooking time includes standing time.

Steps:

  • In a medium bowl, combine the tomatoes, jalapeno, green onion, sweet onion, cilantro and garlic.
  • In a measuring cup, stir together the lemon juice, lime juice, sugar, coriander, cumin and salt.
  • Stir until the sugar and salt dissolve, and then pour over the tomato mixture.
  • Stir gently to combine.
  • Transfer to a serving bowl, cover, and set aside for at least 1 hour to allow the flavors to meld.

4 large plum tomatoes, cored, seeded and cut into 1/2 inch dice (about 1 3/4 cups)
1 jalapeno, seeds and ribs removed, minced
2 green onions, including green tops, cut into thin slices
3/4 cup onion, sweet Walla Walla, diced (I think any sweet onion would work)
1/2 cup fresh cilantro leaves, chopped
1/2 teaspoon garlic, minced
1 1/2 tablespoons fresh lemon juice
1 1/2 teaspoons fresh lime juice
1 teaspoon sugar
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon sea salt or 1/4 teaspoon kosher salt

SUPER SUMMER SALSA

This is a different, sweet salsa that is perfect for summer and receives rave reviews! It stars sweet white corn and black beans, with red onion, red pepper, sugar, and the crisp tang of rice wine vinegar. Serve with chips.

Steps:

  • In a large bowl, stir together corn, beans, onion, red pepper, and sugar. Stir in rice wine vinegar, and season with salt.

SWEET CUCUMBER SALSA

I got this recipe for the Sunday paper, made it tonight and it is AWESOME. It's got a little heat with the sweet! I served it with plain tortilla chips. Sweet Cucumber Salsa image

Steps:

  • Combine all ingredients; refrigerate until needed.
  • NOTES:
  • I seeded the cuke.
  • I would suggest using it within the hour, It will get watery.
  • Recipe can easily be doubled (one full cuke) or tripled tomake a bowl full.

1/2 cup cucumber, diced
2 tablespoons chives, fresh and chopped
2 teaspoons red onions, diced
2 tablespoons red peppers, roasted and diced
2 tablespoons orange marmalade
2 teaspoons lime juice
1/4 small jalapeno, minced (to taste)
pepper, to taste
salt, to taste

Steps:

  • In a bowl, combine beans, tomatoes, red and green onions, lime juice, mango, cilantro, mint, garlic, and salt. Mix well.
  • Cover and refrigerate for 2 hours. Just before serving, stir in flaxseed.

1 (19 ounce) can black beans, rinsed and drained
1 cup roma tomato, seeded and diced
1/2 cup red onion, chopped
1/3 cup green onion, sliced
1/4 cup lime juice
1 mango, chopped
1 tablespoon fresh cilantro, chopped
