EMERIL'S STRAWBERRY LEMONADE
This fruity lemonade comes from celebrity chef Emeril Lagasse who loves the flavor and rosy hue the strawberries add this classic thirst-quenching beverage.

Steps:
- In a medium saucepan, bring 2 cups water and sugar to a boil over medium-high. Reduce to a simmer and cook, stirring occasionally, until sugar dissolves, 2 minutes. Transfer to a pitcher and refrigerate until cool, about 45 minutes. Add lemon juice and stir to combine.
- In a blender, puree strawberries until smooth. Pour through a fine-mesh sieve into pitcher with lemon syrup, pressing on solids. Stir well to combine.
- To serve, stir in seltzer and divide among ice-filled glasses. Top with lemon slices and mint.

- In a medium saucepan, bring the water and sugar to a boil. Reduce the heat and simmer, stirring occasionally, until the sugar dissolves. Add the lemon peel and lemon juice, stir, and remove from the heat. Let cool completely, then strain into a clean pitcher.
- In a blender, puree the pint of strawberries and add to the pitcher with the lemon juice. Stir well to combine and refrigerate until well chilled.
- Add the sparkling water and stir well. Pour over glasses filled with ice and serve, garnished with mint and strawberries.

- Mix strawberries and 1/4 cup sugar together in a bowl; set aside for juices to release from strawberries, 5 to 10 minutes.
- Bring 1 cup water to a boil in a small saucepan; add 3/4 cup sugar. Cook and stir sugar mixture until sugar is dissolved, about 5 minutes. Remove saucepan from heat and cool simple syrup to room temperature.
- Stir simple syrup, 6 cups water, lemon juice, and ice together in a pitcher. Add sweetened strawberries and stir.

- In a large bowl, combine the softened ice cream and sour cream and mix well. Add the brandy and orange liqueur and mix until well combined. Refrigerate until the ice cream has completely melted and the mixture is a sauce consistency, about 30 minutes.
- Place the chocolate in a bowl set over a pot of barely simmering water. Make sure the bottom of the bowl does not touch the water. Stir the chocolate until melted and smooth.
- Pour the ice cream mixture over the strawberries. Drizzle with chocolate and serve.
STRAWBERRY LEMON CRUSH
Steps:
- In a 2 cup measuring cup, combine the sugar, lemon juice, and water and stir to dissolve the sugar. In the bender, combine the strawberries and sweetened water. Puree on high speed until smooth. Add the sparkling water and pulse to incorporate. Taste and add more sugar if desired, and pulse to incorporate. Place cracked ice in 2 tall Collins glasses. Pour the strawberry crush over the ice, garnish with mint sprigs, and serve.

- Preheat a waffle iron according to the manufacturer's instructions.
- Into a medium bowl, sift the flour, baking powder, and salt.
- In a separate bowl, beat together the egg yolks and sugar until the sugar is completely dissolved and eggs have turned a pale yellow. Add the milk, melted butter, and vanilla extract and whisk to combine. Add the flour mixture to the egg-milk mixture and whisk just until blended. Do not overmix.
- In a third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute.
- Using a rubber spatula, gently fold the egg whites into the waffle batter, being careful not to overmix.
- Coat the waffle iron with nonstick cooking spray, if required, and pour enough batter in the iron to just cover the waffle grid. Close and cook as per the manufacturer's instructions until golden brown, 2 to 3 minutes. (Do not open the waffle iron for at least 1 minute.) Repeat with the remaining batter.
- Serve immediately with Strawberry Syrup spooned over the top of each waffle.
- Fresh Strawberry Syrup: In a medium saucepan, combine all the ingredients and bring to a boil. Lower the heat and simmer until the strawberries are soft and the syrup is thickened and reduced by one-third to one-half in volume, 15 to 18 minutes.
- Remove from the heat and let cool to room temperature before serving. (If thinner syrup is desired, strain the hot syrup through a fine mesh strainer into a clean container and let cool.).
