ENZA'S 10 CLOVE "LEAN" MAGRO

Steps:
- 1. Rub the beef with freshly ground pepper, and place in a heavy-bottomed pot large enough to hold the meat. Drizzle the extra virgin olive oil over the meat and turn the meat over to coat with the oil. Add the bay leaf and garlic cloves and marinate for 15 minutes.
- 2. Remove the bay leaf. Brown the meat over medium-high heat, turning to brown evenly. This step will take about 15-30 minutes, depending on the size of the roast. When the garlic begins to color remove it with a slotted spoon.
- 3. When the roast is well browned on all sides and ends return the browned garlic to the pot, remove the pot from the heat, and cover. Let the meat rest for 15-20 minutes. The internal temperature will be 140 degrees. Season the pan juices with salt after meat has rested.
- 4. Cut the meat into thin slices, sprinkle with salt, and serve with the garlic and pan juices.
AUNT ENZA'S TIRAMISU
Steps:
- Prepare the espresso and cool completely. Separate the eggs, discarding the white from 1 of them. Beat 2 egg whites with 1 tablespoon sugar until it forms soft peaks. In another bowl, beat 3 egg yolks with the remaining sugar until thick and pale yellow. Add the mascarpone and Marsala to the egg yolk mixture and blend until well combined. Lightly fold the egg whites into the mascarpone mixture.
- Dip ladyfingers, one at a time, in espresso coffee and line the bottom of a 2 quart bowl or serving dish with about 1/3 of the cookies. Cover with about 1/3 of the mascarpone mixture. Continue building the tiramisù making 3 layers of cookies topped with 3 layers of mascarpone mixture. Dust the finished tiramisù with unsweetened cocoa or chop up some bittersweet chocolate and use it to spell out AUGURI on top. Refrigerate at least two hours.
AUNT ENZA'S OVERSTEWED GREEN BEANS

Steps:
- Put the onion and the garlic in a heavy-bottomed 3-quart pot, drizzle with 2 tablespoons of extra virgin olive oil, and stir to coat the vegetables.
- Place the pot over low heat and cook the onion and garlic for 10 minutes or until tender.
- Add the tomato, green beans, and pepper (or hot pepper) and season with salt. Bring to a simmer and cover with a tight-fitting lid. Cooking time will depend on the quality and freshness of the beans, which should be tender and soft. Check after 10 minutes to make sure that cooking liquid is sufficient. Add 1/4 cup boiling water if necessary. If beans expel too much water, uncover and cook over high heat to thicken sauce.
- Add the basil, cook for 2-3 minutes, remove from heat, and stir in remaining 2 tablespoons of extra-virgin olive oil.
ENZA'S 10-CLOVE MAGRO
Steps:
- In a small heavy Dutch oven just large enough to hold beef rub meat with pepper and drizzle with oil. Add bay leaf and garlic and let mixture stand, covered, 15 minutes.
- Discard bay leaf and brown beef with garlic over moderate to moderately high heat, turning it to brown evenly and regulating heat as necessary. When garlic is golden brown remove with a slotted spoon and reserve. Continue browning meat on sides and ends until a meat thermometer registers 130° F. for medium rare meat, 20 to 25 minutes.
- Return reserved garlic to pan and remove from heal. Let beef mixture stand, covered, 20 minutes and add salt to pan juices. Serve meat, sliced thin, with salt, garlic, and pan juices.
