MIXED BERRY COBBLER

Mixed Berry Cobbler image

Steps:

  • Preheat the oven to 400 degrees F. Coat an 8 by 8-inch baking dish with cooking spray.
  • For the filling: In a large bowl, toss the berries with whole wheat flour, sugar and zest. Transfer the berry mixture to the baking dish and set aside.
  • For the topping: In a medium bowl whisk together the whole-wheat flour, all-purpose flour, 2 tablespoons of sugar, baking powder, baking soda and salt. Cut in the butter using 2 knives or a pastry cutter until many small pebble-sized pieces are formed.
  • In a small bowl or pitcher, whisk together the buttermilk and oil. Add the buttermilk-oil mixture to the dry ingredients and mix until just moistened. Do not over mix. Drop the batter onto the fruit forming 6 mounds. Sprinkle with the remaining teaspoon of sugar. Bake for 30 minutes, until fruit is bubbly and top is golden. Let stand for at least 10 minutes before serving.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  • In a large bowl combine flour, sugar, baking powder and salt. Stir in butter, milk, vanilla and egg until smooth. Fold in raspberries. Pour into prepared pan.
  • Bake in preheated oven 35 to 40 minutes, until top is firm.

Steps:

  • Heat the oven to 425°F.
  • In 2-quart saucepan, mix 1/2 cup sugar and cornstarch. Stir in raspberries, water and lemon juice. Heat to boiling over medium heat, stirring constantly. Continue boiling 1 minute, stirring constantly. Pour berry mixture into 8- or 9-inch (2 quart) glass baking dish.
  • In medium bowl, stir Bisquick™ mix, milk, 1 tablespoon sugar and melted butter just until blended and a dough forms. Drop dough by 6 spoonfuls onto hot berry mixture.
  • Bake about 15 minutes or until berry mixture is bubbly and topping is light brown.
  • Place baking dish on a wire cooling rack. Cool slightly. Serve warm.

Best-In-The-West Berry Cobbler image

Steps:

  • Spread berries in a greased 8 inch square pan.
  • Cream shortening and 3/4 cup sugar well.
  • Sift flour, baking powder, and salt together.
  • Add alternately with milk to creamed mixture. Batter will be thick.
  • Spread batter over berries.
  • Combine remaining sugar and cornstarch together then sprinkle evenly over batter. *NOTE* This is a juicy cobbler but if you want the berries and sauce to be thicker add an extra 1/2 to 1 tablespoon of cornstarch to the remaining sugar.
  • Pour boiling water over all. Do not mix.
  • Bake at 350* for 30-45 minutes, until golden brown and toothpick inserted into middle comes out clean. Serve warm or at room temperature with whipped cream or ice cream if desired. (Doubled recipe fits into a 9x13 pan, but must bake 20-30 mins longer than normal).

  • Melt the stick of butter and let cool. Combine the melted butter and dry yellow cake mix by adding the butter gradually. Mix with a large fork until crumbly.
  • Top the berries with some of the cake mix crumbles. Give the top of your fruit a slight stir to incorporate the mixture just at the top. Then, sprinkle the rest of the cake mix topping over the fruit and pat the mixture down slightly.
