EYEBALL COOKIES

All eyes will definitely be on these adorable cookies when they're set on any buffet table. I created them for my son's kindergarten class for Halloween. -Sherry Lee, Columbus, Ohio

Eyeball Cookies image

Steps:

  • In a microwave, melt 4 ounces of white chocolate; stir until smooth. Dip vanilla wafers in melted chocolate; allow excess to drip off. Place on a waxed paper-lined baking sheet. Chill until set., Melt remaining white chocolate; stir until smooth. Tint as desired. Spread a small amount onto the center of each cookie; place a chocolate chip in the center. , For bloodshot eyes, use a toothpick dipped in red food coloring to draw lines from circles to outer edges of wafers. Chill until set. Store in an airtight container.

Steps:

  • Heat oven to 375°F. In medium bowl, stir cookie mix, softened butter and egg until soft dough forms. Stir in 1/4 cup candy sprinkles.
  • Shape dough into 36 (1 1/4-inch) balls; heavily roll balls in colored sugar. Place 2 inches apart on ungreased cookie sheets. Discard any remaining colored sugar after rolling balls.
  • Bake 7 to 9 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Immediately press candy eyeballs on tops of cookies. Cool completely, about 30 minutes. Store covered at room temperature.

HALLOWEEN EYEBALL COOKIES

Halloween treats to make with your kids. How can anything that looks so hauntingly creepy taste so good ?? My kids have enjoyed taking these to school for years, and so will yours.

Steps:

  • Cream the butter and peanut butter together.
  • Beat in the vanilla and sugar.
  • Chill for 1/2 hour.
  • Roll into small balls, chill on wax paper for another 1/2 hour.
  • In a microwave, melt the white dipping chocolate.
  • Using two spoons dip the eyeballs into the white chocolate.
  • Let cool on waxed paper until firm. Chilling will speed up the process.
  • Pour a drop or two of blue food coloring into the remaining melted chocolate.
  • Make a round iris on the eyeball, and immediately press a miniature chocolate chip in the center for a pupil, doing 5 at at time.
  • For the bloodshot effect, dip the tiny end of a toothpick in red food colouring and squiggle the lines from the pupil outward, but not quite to the edges of the ball.
  • These are quite tasty--considering how creepy they are.
  • Note: White dipping chocolate is also known as white bark.

Steps:

  • In a small bowl, combine 1 cup confectioners' sugar, peanut butter and butter. Shape into 1-in. balls; place on a waxed paper-lined pan. Chill for 30 minutes or until firm. , In a microwave, melt white candy coating; stir until smooth. Dip balls in coating; allow excess to drip off. Place on waxed paper. Immediately press a Reese's candy onto the top of each eyeball for pupil. Let stand for 30 minutes or until set. , In a small bowl, combine the water, food coloring and remaining confectioners' sugar. Transfer to a heavy-duty resealable plastic bag; cut a small hole in a corner of bag. Pipe wavy lines downward from pupil, creating the look of bloodshot eyes. Store in an airtight container.
