CHILI CHEESE DOG NACHOS
Steps:
- Preheat broiler.
- Chop hot dogs into small pieces. Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add chili and hot dog pieces, and cook them until thoroughly heated, about 3 minutes. Set aside.
- Arrange chips on an oven-safe platter or in a large casserole dish. Top the chips first with the chili-dog mixture and then with onion.
- Top evenly with cheese strips.
- Place under the broiler until the cheese begins to melt and bubble, about 2 minutes. Top or serve with sour cream. Garnish with scallions. Eat!
- Combine all of the ingredients except the turkey and salt in a large bowl. Add 2 teaspoons of adobo sauce from the canned chipotle peppers. Mix to combine and coat all of the beans and veggies with sauce. Put the turkey in the bottom of the crock pot and break it up into small chunks. Pour the chili mixture on top and mix. Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours. Stir to distribute the turkey. Add salt, to taste. Mmmmm!!!

Steps:
- Bring a large pan sprayed with nonstick spray to medium heat on the stove. Add turkey and spread it around in the pan to break it up a bit. Cook and crumble until meat is brown and cooked through, about 6 minutes. Drain any fat or liquid, and then transfer turkey to the crock pot.
- Add all other ingredients except for the chocolate to the crock pot. Add 1 tablespoon adobo sauce (from the canned chipotles). Mix well to combine.
- Cover and cook on high for 2 hours, and then reduce heat to low and cook for an additional 3 hours. (OR cover and cook on low for 6 - 7 hours straight.)
- Add chocolate and stir until pieces melt and disappear into chili. Cover and cook for 1 hour longer on low. Add salt to taste. If you like, top each serving with a little sour cream. Mmmmm!

EASY AS 1, 2, 3, OR 4, ALARM!!! CHILI
Steps:
- In a large stockpot, empty all canned ingredients. Add all spices, and turn the burner on to a simmer, covered, and stirring occasionally.
- While the base is simmering, brown the ground beef over a medium-high heat, add fresh chopped garlic and diced onion. Once the beef is fully cooked, drain if desired.
- Take the lid off of the stockpot and put the ground beef in to the base. Stir chili well, replace lid and turn the heat up to a medium-low heat and simmer for another 15 minutes, stirring occasionally.

2 ALARM TURKEY CHILI
This recipe is a take off of the famous 2 alarm chili. I adjusted a few of the ingredients to make it healthier! If you purchase the 2 alarm chili package, most of the ingredients are there. I leave out the masa to not add the calories and carbs. I also like mine a bit sweet so I add some cooking Splenda. Hope you enjoy!

Steps:
- Brown turkey meat in skillet, then drain. You can purchase the 2 alarm chili package and most of the dry ingredients are there. Combine meat, beans, tomatoes, water, and dry ingredients. Simmer on medium heat for approximately 20 minutes.
