The home economists in our Test Kitchen simmered up this fresh-tasting meatless soup. Hearty with two kinds of beans, it makes a satisfying entree. Round out the meal with Walnut Zucchini Muffins or warm dinner rolls.

- In a large saucepan, saute the zucchini, onion, celery and carrot in oil for 5-7 minutes or until crisp-tender. Add the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are tender.

RUSTIC FALL VEGETABLE SOUP

- In a large heavy-bottomed pot, heat the butter or oil over medium-high heat. Add the onion and saute until fragrant and translucent. Add the garlic and saute until golden brown.
- Add the winter squash, zucchini, sweet potato, orzo, canned tomatoes, thyme, rosemary, and broth. Simmer until the vegetables are soft and cooked through, about 30 minutes.
- Season the soup with salt, and black pepper, to taste. Serve with sliced crusty bread.

WHITE BEAN AND VEGETABLE SOUP

Steps:
- Place the dry beans in a pot, cover with 3" of cold water, and let them soak overnight.
- The next morning drain the beans in a colander and rinse very well with cold water. Return the beans to the pot, add just enough water to cover them, and bring the water to a boil. After a couple of minutes, remove the pot from the heat, drain the water again and rinse the beans again. (This step is important, not only you are getting rid of the impurities and the residue of the beans, but your beans will be easier to digest and more gentle on your stomach!)
- Return the rinsed beans to the pot along with 6 cups of cold water and the olive oil. Bring to a boil, reduce to a medium simmer, and partially cover with a lid. Cook for 15 minutes.
- While the beans cook start prepping the vegetables. Once prepared add the leeks, shallot, kale, carrots, celery and garlic to the pot. Next add the bay leaves, oregano, rosemary, and ground pepper. Finally, if you have it, add the Parmesan rind (it adds lots of flavor to soups and stews as it slowly melds with the broth). Cook the soup for another 30 minutes, or, until beans are almost cooked.
- Stir the potatoes and the tomato into the soup. Simmer for another 15 minutes or so, until the potatoes are tender. Lastly, stir in the soup the salt. Taste and adjust the seasoning, if necessary.
- Let the soup cool down slightly, then serve with a generous drizzle of olive oil and a good sprinkle of fresh Parmesan cheese.
ROASTED FALL VEGETABLE SOUP
This is an easy, hearty soup for the cooler fall weather.

- Working in batches, puree vegetables in blender with a total of 4 to 5 cups water. Pour each batch through a fine-mesh sieve into a large saucepan, pressing puree through with a spoon or rubber spatula.
- Thin puree with additional water, if necessary; heat soup over medium. Add lemon juice, salt, and pepper to taste. Serve with bread or crackers, if desired.
FALL VEGETABLE SOUP WITH WHITE BEANS
This is a recipe payoff from having made the Stewed Cauliflower, Butternut Squash, and Tomatoes (page 55), beefed up with the addition of white beans, crunchy croutons, fresh thyme, and cheese. The soup is a beautiful orange color and tastes of cream, even though it has no such thing in it.

- Preheat the oven to 425°F.
- Put the bread cubes on a small baking sheet, drizzle with the oil, and toss to coat. Arrange in a single layer and toast in the oven for 5 to 6 minutes, until very crisp and golden brown, watching closely to avoid burning them. Use tongs to turn over the bread cubes and toast for another 5 to 6 minutes to create evenly browned croutons. Remove from the oven.
- Combine the stewed vegetables and stock in a small saucepan over medium heat. Cook until hot, about 5 minutes.
- Add the white beans and cook for a few minutes until heated through. Add more water if you want a thinner texture. Stir in the thyme. Taste and add salt and pepper, if desired.
- Pour the hot soup into a bowl, add the croutons, sprinkle with the cheese, and eat.

- Preheat the oil in a large soup pot or Dutch oven. Add the leeks, carrot, and parsnip and saute for 5 minutes or until softened. Add the garlic and butternut squash and saute for about 1 minute. Add the stock or water, diced tomatoes, bay leaf, thyme, and rosemary and stir.
- Bring to a boil and reduce heat to a simmer. Add the beans and continue simmering for about 15 minutes or until the vegetables are tender.
- Add the kale and simmer for about 5 minutes until wilted. Remove from heat and discard the bay leaf and thyme sprig.

- *You can certainly use regular (full) sized carrots. I just always buy baby carrots since we are more likely to snack on them if I buy this size. I’ve provided the weight so you can easily change this out if you have or prefer to buy regular sized carrots—doesn’t matter.
- Remove the top (green leafy part) and bottom roots of the leek and slice thin. Also chop up the carrots, celery, and peel and cube the potato. In a large pot over medium/high heat, add the olive oil and those vegetables. Season with the cumin and some salt and pepper. Don’t go crazy with the salt at this stage as we will add more later when we can taste the soup. (So we can add just enough without making it too salty—I’ve made this mistake too many times to count. Ha!) Cook until the leeks are very soft and the potatoes are just beginning to soften, about 6-8 minutes.
- Add the water and bay leaf, cover, reduce the heat to a low simmer, and continue to cook for an hour. You should be able to easily mash a potato piece with the side of a large wooden spoon against the side of the pot by the end of the cooking time here. Remove the bay leaf. Working in batches, use a good blender to puree the soup, or you can use an immersion blender.
- Drain and rinse the beans and add them to the pureed soup as it’s still cooking over low heat. Taste and now season with as much salt and pepper as you think it needs. After about 10 minutes, giving the beans time to warm up, add the chopped dill and finely chopped kale if using. I really like the kale here. It just gives this soup a bit more life, but if you don’t want to buy kale just to use a small amount, you can leave it out (spinach would work well too).
