FARMER BROWNIES

Another great recipe from the "Chocolate Favorites from Amish Country" cookbook. I like to bake with buttermilk and this recipe includes it as well as hot water. You will not be disappointed with these brownies as they are a winner!

Steps:

  • Mix cocoa with hot water and stir in butter. Allow to cool.
  • Sift dry ingredients together and stir into cocoa mixture.
  • Beat in buttermilk, then vanilla. Add nuts and stir to mix well.
  • Spread on greased 10" x 15" jelly roll pan.
  • Bake at 350 degrees until done. (about 25 minutes in my oven).
  • May frost with your favorite chocolate frosting. I like to do this while the brownies are still warm.

1 cup hot water
3/4 cup butter
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups sugar
2 eggs, slightly beaten
1/2 cup buttermilk
1 teaspoon vanilla
1 cup chopped nuts

CHOCOLATE BROWNIES (FROM THE FARM OF BEVERLY HILLS)

This recipe for rich, fudgey brownies was printed in Gourmet Magazine, (Feb 2000). The Farm of Beverly Hills has the most incredible brownies. These are very rich! They taste even better the day after they're baked. Cooks' note: Brownies keep, layered between wax paper in an airtight container for 5 days.

Chocolate Brownies (From the Farm of Beverly Hills) image

Steps:

  • Preheat oven to 350°F Butter and flour a 13- by 9- by 2-inch metal baking pan, knocking out excess flour.
  • Melt butter with chocolate in a large metal bowl set over a saucepan of barely simmering water, stirring until smooth. Remove bowl from pan and whisk in eggs, 1 at a time.
  • Sift together flour and cocoa powder in a separate bowl and stir into batter with sugar and salt.
  • Pour batter into pan and bake in middle of oven until top is firm and a tester inserted into center comes out with crumbs adhering, 40 to 45 minutes. Cool completely in pan on a rack, about 2 hours, before cutting into 20 squares.
