CAJUN CRAB POPPERS

My brother moved to New Orleans and I love visiting him and his family whenever I can. These easy jalapeno poppers are stuffed with crab, cajun seasonings and bacon. They're a little hot and spicy, just like a visit to New Orleans! -Elizabeth Lubin, Huntington Beach, California

Cajun Crab Poppers image

Steps:

  • Preheat oven to 375°. In a small bowl, beat the first 5 ingredients until blended. Stir in shredded cheese, crab and bacon. Cut jalapenos in half lengthwise and remove seeds. Spoon filling into pepper halves. Place on an ungreased baking sheet. Bake until lightly browned, 15-20 minutes. Sprinkle with additional parsley.,

4 ounces cream cheese, softened
1 large egg, lightly beaten
2 tablespoons minced fresh parsley
1 garlic clove, minced
1/2 teaspoon Cajun seasoning
1-1/2 cups shredded sharp cheddar cheese
1 can (8 ounces) lump crabmeat, drained
2 bacon strips, cooked and crumbled
8 jalapeno peppers

BAKED CRAB POPPER DELIGHTS

The perfect crab appetizer! These are basically a crab cake in popper form. No one needs to know how quick and easy these are. With a bit of heat, the red pepper adds a punch of flavor. The lemon sauce brushed on top is a great touch.

Baked Crab Popper Delights image

Steps:

  • 1. Heat oven to 425 degrees. Spray cups of a mini-muffin pan with non-stick cooking spray. Sprinkle cups with 1/2 cup of the bread crumbs, gently tapping and rotating to coat.
  • 2. Finely chop bell pepper. Blot peppers dry with a paper towel. Finely chop onion tops setting aside 1 teaspoon for garnish.
  • 3. Combine corn, bell pepper, remaining green onions, crabmeat, 1/2 of the mayonnaise, egg, black pepper, and salt. Mix well but gently to not break up the crabmeat too much. Sprinkle lightly with remaining Panko crumbs.
  • 4. Divide mixture evenly among cups of pan. Bake 10 minutes or until golden brown. Remove pan from the oven. Cool in pan 2 minutes and then remove from pan to cooling rack.
  • 5. Meanwhile juice lemon for the sauce. Combine juice, cayenne pepper, and remaining mayonnaise. Mix well. Brush tops of crab cakes with sauce.
  • 6. Top with reserved finely chopped green onion tops.

1/4 c green onion stems, finely chopped

I wanted to make these poppers for the 4th of July. Since it was so hot we decided to do everything on the grill, including the hordourves..crab stuffed poppers and Buffalo chicken dip..It worked great and were very yummy.

Crab Stuffed Jalapeno Poppers image

Steps:

  • 1. Line grill safe cookie sheet with HD foil. Cut peppers in half lenghtwise and remove seeds and membrane. (can be one the day ahead)I use latex gloves for this. A couple of times I haven't and paid the price. ouch! Place pepper halves on lined cookie sheet.
  • 2. Mix together all other ingredients. If using imitation krab, chop till flakey in food processor. and stuff peppers with mixture. Grill for about 20 minutes until bubbly and browned. Let cool for 5 minutes. Enjoy!
  • 3. You can also bake these in the oven. I bake them @400 degrees for 20 minutes and then broil for 2-3 minutes. yummmm

20 - 25 small fresh jalapeno peppers and mini red, yellow & orange bell peppers. a mix is good for all taste buds.
2 - 8 oz block of cream cheese, softened
1 1/2 c shreaded mexican cheese blend or any cheddar cheese
1/4 c fresh parmesan cheese
2 - 8 oz cans crab meat, drained well, or fresh crab meat or imitation krab
zest and juice of 1 lemon, or to taste or 1 tsp lemon pepper
1/2 tsp garlic powder
1/2 c chopped green onion
1 tsp old bay seasoning
1/4 tsp fresh ground black pepper

Steps:

  • boil jalapenos in water for 10-15 minutes until tender.
  • drain and cool.
  • dry with paper towel.
  • combine cheeses,crab meat and salsa in a bowl.
  • fill each pepper half with enough of the cheese mixture to fill to the top.
  • dredge the peppers in egg then flour (i add paprika and salt to flour to taste not much) then egg and finally in corn flakes.
  • repeat until all peppers are coated, then refridgerate for 2 hours.
  • in a heavy skillet add enough oil to cover peppers bring oil to high heat but not smoking.
  • fry until golden brown on each side.
  • drain, and continue until each pepper is fried.
  • serve with sour cream, jalapeno jelly and or salsa and guacamole.

10 jalapeno peppers (sliced in half and seeds and veins removed)
1 can white crab meat (drained)
1 (8 ounce) package cream cheese
1/2 cup shredded cheddar cheese
2 tablespoons salsa (your choice,i use pace picante medium)
2/3 cup self-rising flour (seasoning optional)
1 cup corn flakes (run through food processor until powdery like flour)

There are many delicious versions of jalapeño poppers: Some are breaded and deep-fried, others use two kinds of cheese, and another, called armadillo eggs, calls for enrobing the cheese-stuffed peppers with ground meat and bacon. These easy-baked poppers are filled with tangy cream cheese - brightened with scallions, cilantro, garlic and lime zest - then wrapped with bacon for looks, salt and crunch. For a vegetarian variation, sprinkle the stuffed jalapeños with finely crumbled tortilla chips before baking to complement the crisp-tender chiles and the molten-cheese filling.

Jalapeño Poppers image

Steps:

  • Heat the oven to 400 degrees. Line a large baking sheet with aluminum foil, then top with a wire rack.
  • Halve jalapeños lengthwise. (Do your best to halve them through their stems for added visual appeal.) Using the tip of a small spoon, scoop out and discard the seeds. Set the halved jalapeños aside.
  • In a medium bowl, stir together the cream cheese, cilantro, scallions, garlic and lime zest, if using; season generously with salt and pepper.
  • Season the inside of each halved jalapeño with salt and pepper, then fill each with about 2 teaspoons of the cream cheese mixture. (Fill until there's a slight dome on top.) Wrap each stuffed jalapeño with 1 piece of bacon, setting one tip of bacon on top of the cream cheese filling, then wrapping the bacon under and over the popper at an angle, so the bacon covers the filling on top in two layers. (The bacon will shrink as it cooks, so you want to make sure the top of the popper is well covered.) Arrange poppers evenly on the wire rack, nestling each popper between two parallel wires to keep it upright so the cream cheese doesn't spill during baking.
  • Transfer to the oven, and bake until bacon is cooked through, about 25 minutes. Broil on the rack closest to the broiler until crisp, about 2 minutes. Let cool for 5 minutes, then serve warm.

12 medium jalapeños (no longer than 3 inches each, about 2/3 pound total)
8 ounces cream cheese, softened
Scant 1/4 cup finely chopped cilantro
3 scallions, whites and greens parts, trimmed and very thinly sliced (about 1/4 cup)
1 garlic clove, finely chopped

  • Rinse lump crab meat and pick through for any shells Drain well and add to large bowl. In medium sauté pan, melt butter and cook green onions, red bell pepper and celery. Season with kosher salt and cook for 3-5 minutes or until vegetables have softened. Add to lump crab meat with parsley. In small bowl combine egg, Worcestershire sauce, mayonnaise, dry mustard and cayenne pepper and add to crab meat. Stir gently to combine. Fold in 3/4 cup Panko bread crumbs. Roll crab meat mixture into 1 inch balls, and coat in remaining Panko bread crumbs. Refrigerate crab balls for 30 minutes.
  • Heat 1 cup of canola oil, or about 1/2 inch of oil, in large cast iron skillet over medium high heat. Fry crab cake poppers in batches making sure not to crowd pan, gently turning balls so all sides are golden brown, about 3-4 minutes each side. Drain poppers on paper towel lined plate while frying remaining crab cake balls, adding more oil as necessary. Serve hot with Spicy Aioli.
