MAPLE BRINED TURKEY

Maple Brined Turkey image

Steps:

  • Place all the ingredients, except the turkey, in a large pot and bring to a boil, stirring until the salt dissolves. Remove from the heat and let cool.
  • Line a large stockpot with an unscented garbage bag and put the turkey into the pot. Pour the cooled brine over the bird, close and seal the bag, and refrigerate overnight.
  • Preheat the oven to 350 degrees F. Remove the turkey from the brine, dry well, and discard the brine.
  • Roast the turkey as you normally would, approximately 15 minutes a pound. Let stand for 30 minutes before carving.

8 quarts water
2 cups kosher salt
2 cups pure maple syrup
2 bunches fresh thyme
6 bay leaves
4 large garlic cloves, peeled and crushed
3 tablespoons black peppercorns
1 (20-pound) turkey

BRINED PORK CHOPS WITH FENNEL

Pork and fennel - both fennel seed and the bulb-shaped vegetable - are often companions, and the combination of flavors is quite delicious. For best results, let the chops soak for at least a few hours, preferably overnight, in a quickly made brine.

Brined Pork Chops With Fennel image

Steps:

  • Make the brine: Put salt, sugar, bay leaves, peppercorns, allspice and fennel seeds in a bowl. Whisk in 4 cups water to dissolve salt and sugar.
  • Put pork chops in one layer in a glass or plastic container. Pour brine over to completely submerge chops. Cover and refrigerate for at least 2 hours, preferably longer, up to overnight. Remove chops from brine and pat dry. Discard brine.
  • Cook the chops: Heat oven to 400 degrees. Set a wide, heavy skillet over high heat and add olive oil. When oil is wavy, add chops in one layer and let brown for about 3 minutes per side.
  • Remove chops from pan and set aside. Reduce heat to medium-high and add sliced onion and fennel, stirring to coat with oil. Season with salt and pepper and cook, stirring, until beginning to color, about 5 minutes. Stir in garlic and crushed fennel seeds and turn off heat.
  • Lay the chops on top of the onion-fennel mixture (alternatively, transfer all of it to a baking dish) and place pan, uncovered, in oven for 20 to 25 minutes, until the internal temperature of chops is 140 degrees.
  • Remove chops and let rest for about 5 minutes. Transfer onion-fennel mixture to a platter and keep warm. Cut chops into 1/8-inch slices and add to platter. Sprinkle with parsley and garnish with fennel fronds. Serve with lemon wedges.

Mean Chef's Maple Brine image

Steps:

  • Combine all ingredients in large stainless steel pot.
  • Bring to simmer, remove from heat and cool completely Remove turkey neck and giblets.
  • Rinse turkey well.
  • Put turkey in cold brine.
  • Use a stainless, plastic or other non-reactive container.
  • Add water if brine doesn't cover bird.
  • Refrigerate 2- 4 days, turning bird twice a day.
  • To cook: remove turkey from brine, pat dry, brush with olive oil.
  • Either grill or cook in oven.
  • It is also advantageous to leave the dry turkey in the refrigerator for at least 4 hour or overnight, uncovered.
  • This completely dries out the skin to insure a crisp finish.
  • DO NOT stuff turkey.

  • Preheat oven to 425°. Rinse turkey clean under cold water; pat dry and place, breast side up, on a rack set in a large roasting pan. Stuff turkey with onion, garlic, and herbs. Working from neck end of turkey, gently loosen skin from breasts and rub butter under skin and all over outside of bird. Tie legs together with kitchen twine, pour broth into pan, and roast turkey 30 minutes. Reduce oven temperature to 325° and roast, basting with pan juices every 30–40 minutes, adding more broth as needed to maintain some liquid in pan, and tenting with foil if skin is browning too quickly, until an instant-read thermometer inserted into thickest part of thigh registers 165°, 2½–3 hours.
