Marinated Feta and Olive Skewers image

Steps:

  • In a medium bowl combine the fennel seeds, orange zest, orange juice, and pepper. Gently stir in the feta and marinate for 1 hour or more.
  • To make the skewers, place a mint leaf about 3/4-inch up the skewer, then add an olive half, then a chunk of cucumber. Gently place a cube of the marinated feta on the end.

Steps:

  • Heat the grill to high. Cut one lemon half into wedges, and slice the other half. Thread a piece of the bread onto a skewer, then a piece of feta, a lemon slice and a cherry tomato. Repeat, then finish with a piece of bread. Do this on three more skewers and place kebabs onto a baking tray.
  • Sprinkle over the zest and rosemary then drizzle over the oil. Grill kebabs for 1-2 mins on each side until feta is browned. Serve with lemon wedges.

Grilled Greek Chicken Kebabs with Mint-Feta Sauce image

Steps:

  • In a resealable plastic bag, combine chicken, zucchini, onion, oil, oregano, and 2 tablespoons vinegar; season with 1/2 teaspoon salt and teaspoon pepper. Marinate at room temperature for 30 minutes (or refrigerate up to overnight).
  • Heat grill or grill pan to medium. Soak eight 6-inch wooden skewers in water for 15 minutes.
  • Onto each skewer, alternately thread 3 pieces of chicken with 2 of zucchini and 2 of onion (see below). Grill skewers, turning occasionally, until chicken is cooked through, 12 to 14 minutes.
  • Meanwhile, make dipping sauce: In a food processor, blend feta, yogurt, mint, and remaining tablespoon vinegar until smooth. Serve kebabs with dipping sauce.

Steps:

  • Make the kebabs: Combine oil, zest and juice, garlic, oregano,and lamb in a nonreactive dish; refrigerate for 30 minutes.
  • Meanwhile, make the feta sauce: Pulse all ingredients ina food processor until very smooth. Refrigerate.
  • Heat grill to medium-high. Thread lamb and cucumbersonto 8 metal skewers; finish each with a lemon wedge. Seasonwith salt and pepper. Grill 10 to 12 minutes for medium-rare,flipping halfway through. Serve with sauce.
