Fetuchini Alfredo con pollo image

Steps:

  • Cuece la pasta según las instrucciones del paquete, pero omite la sal.
  • Entretanto, cocina el pollo, revolviendo de vez en cuando, en una sartén antiadherente grande rociada con aceite en aerosol a fuego medio-alto de 5 a 7 min. o hasta que se cocine por completo. Retíralo de la sartén. Mezcla la harina y el caldo con un batidor de varillas en esa misma sartén. Incorpora el queso neufchatel, 2 cucharadas del queso parmesano, el ajo en polvo y la pimienta; cocina la mezcla, revolviendo constantemente, por 2 min. o hasta que hierva y espese. Incorpora el pollo.
  • Escurre la pasta; ponla en un tazón grande. Agrégale la mezcla de pollo; revuelve hasta cubrirla bien. Espolvorea el resto del queso parmesano.

Steps:

  • Heat large saucepan of salted water to boiling. Heat butter and oil in large heavy skillet over medium heat. When foam subsides, add chicken, onions, mushrooms and garlic; cook, stirring occasionally, until chicken begins to brown, about 7 minutes.
  • Stir in cream, tomatoes, peas, salt, and pepper; heat to boiling over high heat. Reduce heat to medium and simmer until sauce is slightly thickened and chicken is cooked through, 3-5 minutes. Stir in basil and remove from heat.
  • Meanwhile, cook pasta in boiling water until tender, but still firm to the bite. Drain thoroughly and transfer to wide serving bowl. Pour sauce over pasta; sprinkle with Parmesan and toss to combine. Serve hot.

  • Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat. Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper.
