This is a recipe I got from a dear friend. She says that she never comes home with leftovers. She assured me that the men in my family would love it and they did! It is spicy, delicious, and easy to fix. She mentioned that she uses less mayo then the recipe calls for.

- In a 6-qt. stockpot, heat butter over medium heat. Add onion and jalapenos; cook and stir until onion is crisp-tender, 3-4 minutes. Stir in tomatoes; cook 3 minutes longer., Add corn; cook, uncovered, until tender, stirring occasionally, 8-10 minutes. Stir in salt. If desired, serve with lime wedges.

- Open and drain the liquid from the canned corn, black beans and Rotel. Chop the green onion and measure out the remaining ingredients.
- Add all the ingredients to a large prep bowl and stir to combine. The dip will be slightly watery. Cover the dip and refrigerate for at least 2 hours or as long as overnight.
- Once refrigerated, stir the dip and serve cold with additional toppers and chips of choice. Enjoy!
