FIESTA SPANISH RICE
A lot of my dear friends are not big cooks so I'm giving you another simple recipe. This is a guaranteed Spanish Rice Success. No fuss no muss only happiness.

Steps:
- Drain juice of tomatoes into measuring cup add enough water to that juice to equal 1 cup of liquid.
- Mix liquid, beans, corn and tomatoes in a medium saucepan. Bring to boil.
- Stir in rice. Cook 5 minutes.
- Remove from heat; stir. Let stand, covered, 5 minutes.
- Just before serving stir in cilantro and juice of lime.
- There you go easy and yummy. Top it with Grilled chicken, cheddar cheese, and cilantro sour cream and you have a fabulous tex-mex meal in minutes.

MEXICAN FIESTA RICE
Make this tasty Mexican rice to serve a crowd. Our recipe is vegan but if everyone you're cooking for eats meat, some chopped bacon in with the onions works well

Steps:
- Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.
- Pour over the stock, then cover and bring to the boil. Stir quickly, then cover again and place on the lowest heat possible. Simmer for 10 mins. Turn off the heat and leave, covered, for a further 10 mins. If serving straightaway, stir through the coriander and spring onions; alternatively, leave the rice to cool, chill, then re-fry before serving and stir the coriander and spring onions through at the end.

FIESTA SALSA RICE
A blend of ground beef, Spanish rice, corn, and salsa that combines to form a delicious dish.

Steps:
- Bring 2 cups water and olive oil to a boil in a medium saucepan. Stir in rice and contents of spice pack. Return to a boil. Cover; reduce heat to low. Simmer until most water is absorbed, 20 to 25 minutes.
- While rice cooks, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Stir cooked beef, salsa, and corn into the rice. Let simmer for 5 minutes or until warm. Serve.

- In a small skillet over medium heat, saute the onion in butter until tender. Transfer to a large bowl. Stir in the next eight ingredients. , Divide between two ungreased 13-in. x 9-in. baking pans.
