FIESTA LASAGNA

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes, salsa, chilies and seasonings. , In a large bowl, combine Monterey Jack and mozzarella cheeses; set aside 1 cup. Stir cottage cheese and 3/4 cup sour cream into remaining cheese mixture. , Spread 1 cup meat sauce into a greased 13x9-in. baking dish. Layer with three noodles, and a third of the cottage cheese mixture and meat sauce. Repeat layers twice (dish will be full). , Cover and bake at 350° for 1 hour. Uncover; spread with remaining sour cream. Sprinkle with reserved cheeses. Bake 10-12 minutes longer or until cheese is melted. Let stand for 10 minutes before serving.

1/4 cup chopped onion
1 can (16 ounces) refried beans
1 can (16 ounces) mild chili beans, undrained
1 can (14-1/2 ounces) Mexican stewed tomatoes, drained
1 cup salsa
1 can (4 ounces) chopped green chiles
1 envelope reduced-sodium taco seasoning
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1-1/4 cups shredded Monterey Jack cheese
1-1/4 cups shredded part-skim mozzarella cheese
3/4 cup 4% cottage cheese
1-1/4 cups sour cream, divided
9 lasagna noodles, cooked, rinsed and drained

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning. In a small bowl, combine egg whites and ricotta cheese. Drain noodles., In each of two 13x9-in. baking dishes, layer 4 noodles, 2/3 cup ricotta mixture, half the beef mixture and 1-1/3 cups cheddar cheese. Top each with 4 noodles, 2/3 cup ricotta mixture, 1-1/3 cups salsa and 1-1/3 cups cheese. For final layer, top each with 4 noodles, 2/3 cup ricotta mixture, 1-1/3 cups salsa and 1-1/3 cups cheese., Bake, uncovered, 35-40 minutes or until heated through. Let stand for 10 minutes before cutting. Freeze option: Cover and freeze unbaked lasagna. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Bake lasagna as directed, increasing time as necessary to heat through and for a thermometer to read 165°.

Steps:

  • Heat oven to 375°F. In ungreased 13x9-inch (3-quart) glass baking dish, spread 1/4 cup of the salsa. Layer with 3 noodles and 1/3 each of the chicken, beans, cilantro, salsa and cheese. Repeat layers twice with remaining noodles, chicken, beans, cilantro, salsa and cheese.
  • Cover baking dish with foil. Bake 40 minutes. Uncover; bake 15 to 20 minutes longer or until hot in center. Let stand 10 minutes before cutting.

Cheesy Chicken Taco Lasagna image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine chicken and taco seasoning in a large skillet over medium heat; cook and stir until chicken is no longer pink, about 5 minutes. Add 1 1/2 packages cheese and 3/4 jar salsa. Mix thoroughly and set aside to cool.
  • Spread 1/2 jar salsa in a 9x13-inch baking dish. Cover salsa with 6 corn tortillas. Spoon refried beans on top. Cover beans with 1/2 package cheese. Add a layer of 6 corn tortillas. Spread chicken mixture evenly on top. Add the last 6 corn tortillas. Spread 1 jar salsa on top. Sprinkle remaining 2 packages cheese on top.
  • Bake in the preheated oven until cheese is melted and filling is hot and bubbly, 30 to 45 minutes.

I can't remember where I originally got this recipe, but I have making it for years and people always ask for the recipe. If you love Mexican food, then this one is for you!!

Steps:

  • Cook pasta and cool.
  • Cook meat, onion and green pepper.
  • Drain.
  • Stir in taco seasoning, water and sauce; heat to boiling.
  • Reduce heat- simmer 5 minutes.
  • Heat oven to 350~.
  • Pour 1/2 of meat sauce on bottom of 13X9X2 baking dish.
  • Layer with noodles, meatsauce and cheeses.
  • Top off with sauce and cheese.
  • Cover with foil and bake 20 minutes.
  • Remove foil; bake 10 minuites until bubbly.
  • Let stand 10 minutes.
  • Serve sprinkled with lettuce and tomato and black olives.
  • Great when you have company OR fix in two smaller dishes and freeze one for later.
  • Freeze before baking.

  • Spread about 1 cup chicken mixture in bottom of sprayed baking dish. Top with 4 uncooked noodles, breaking to fit if necessary. Spread with half of bean mixture and 1 1/2 cups chicken mixture. Sprinkle with 1 cup of the cheese, half of the onions and half of the olives.
  • Layer 4 more noodles, remaining bean mixture, 1 1/2 cups chicken mixture and 1 cup cheese. Top with remaining 4 noodles, chicken mixture, onions, olives and cheese. (Be sure top noodles are covered.) Cover with foil, sprayed side down. Refrigerate at least 8 hours or overnight.
  • Heat oven to 350ºF. Bake covered lasagna for 50 minutes. Uncover baking dish; bake an additional 18 to 22 minutes or until bubbly and thoroughly heated. Let stand 10 minutes before serving. Sprinkle with cilantro. If desired, garnish each serving with dollop of sour cream, chopped tomato and shredded lettuce.
