ROASTED FIGS AND PROSCIUTTO

Roasted Figs and Prosciutto image

Steps:

  • Preheat the oven to 425 degrees F.
  • Snip the hard stems off the figs and cut the figs in half lengthwise through the stem. With a small sharp knife, cut the prosciutto lengthwise into inch-wide strips. Wrap a strip of prosciutto around the center of each fig half, with the ends overlapping. Brush with olive oil and arrange cut-side up on a sheet pan.
  • Roast the figs for 10 minutes, until the prosciutto is a little crisp and the figs are warmed through. Serve warm.

Good olive oil
20 large fresh ripe figs
20 thin slices Italian prosciutto (about 8 ounces)

Prosciutto Wrapped Figs And Blue Cheese image

Steps:

  • Preheat grill. You will need medium to high heat for grilling. The key is to crisp the prosciutto quickly and leave the blue cheese just melted with the inner part of the fig cool in temperature.
  • Cut the figs in half and place a piece of blue cheese on each fig half. Wrap the prosciutto around each fig half, covering the cheese. The ends of the prosciutto should overlap.
  • Grill each piece until the prosciutto begins to color and crisp, about 2 minutes on each side. Remove from grill, lightly drizzle with extra virgin olive oil and season with sea salt and pepper. Serve warm.

8 Black Mission figs
1/2 cup blue cheese, cut into cubes
8 prosciutto (thinly sliced, cut in half lengthwise)
2 tablespoons extra-virgin olive oil
Sea salt and freshly ground black pepper

Fresh-Fig Grilled Cheese Sandwiches image

Steps:

  • Heat a griddle over medium heat.
  • Spread cut sides of bread with fig jam. On the bottom half of the bread, layer 1/2 the cheese, then the ham, the figs, and the remaining cheese. Enclose with the top half of the bread. Brush with rosemary oil. Place on griddle or in a nonstick skillet, and weight top of sandwich with a heavy skillet or a foil-lined brick. Cook until bottom is golden, about 4 minutes. Flip sandwich over, and repeat with opposite side. Cut crosswise into 6 to 8 pieces; serve immediately.

1 loaf ciabatta bread, ends trimmed, sliced in half horizontally
1/4 cup store-bought fig jam
3/4 pound fontina cheese, sliced
1/3 pound thinly sliced Black Forest ham
8 to 10 fresh figs, thinly sliced lengthwise
1 tablespoon Rosemary Oil

Grilled Brie, Fig and Prosciutto Sandwiches image

Steps:

  • Spread the fig preserves onto 4 slices of bread.
  • Cut the Brie into 8 long, thin slices.
  • Lay 2 slices of Brie over the preserves. (I have also used creme de brie since I don't really care for the rind of Brie. If you go this route you can just spread the creme de Brie over the other slices of bread.).
  • Arrange the prosciutto over the Brie.
  • Top with the remaining 4 slices of bread.
  • Spread half of the butter over the tops of the sandwiches and invert onto a hot skillet or pan.
  • Spread the remaining butter on the other side of the sandwiches.
  • Cook on the stove or in the oven, turning the sandwiches over once or twice, until the bread is golden brown and the Brie is melted.
  • Cut in half to serve.

Fresh Fig and Prosciutto Sandwich image

Steps:

  • Preheat oven to 350°F
  • Scoop out a bit of bread from the centre of the bread halves.
  • Mix the oil and basil in a small bowl and drizzle evenly over both bread halves.
  • Arrange the prosciutto evenly over the bottom half of the bread.
  • Gently spread the cheese over the prosciutto and top the cheese with sliced figs. Sprinkle with the lemon juice and black pepper.
  • Cover with the top half of the bread and wrap in aluminum foil, leaving the seam on top open slightly.
  • Bake until the cheese is melted and the sandwich is heated through, about 15 minutes. Cut into 8 equal pieces and serve immediately.

  • Place a large skillet over medium heat and crisp up the prosciutto, in batches, until just golden brown; about 1 minute per side. Transfer to a plate for now, and don’t clean out that skillet!
  • To build the sandwiches, lay the bread slices on a work surface, or two plates, and slather two slices with a generous amount of the fig preserves (use as much as you like; my amount is approximate). Top with dollops of brie, two slices of Swiss, and the prosciutto, each sandwich getting 2.5 slices of the ham.
  • Put the remaining bread slices on top, creating two sandwiches. Butter both sides of each sandwich, ensuring the entire surface of both sides are nice and coated. Press a few sage leaves into one side of each sandwich. Top the sage with the grated parmesan, covering evenly and pressing it in a little bit. Only one side of each sandwich should have the sage + parmesan crust.
  • Add a TBSP or 2 of butter to the skillet, set over medium heat, and cook the sandwiches, parm side down, until nice and golden brown and crusty; about 4 minutes or so. When they’re ready, flip them and cook the other sides until browned; about 3 to 4 more minutes.
