WW 5 CAN SOUP

This recipe is from a Weight Watchers meeting. It is so quick -- I ate it daily when I was on maternity leave with my second son. If I am making it for the week, I just empty the cans into a plastic container and warm up 1 serving in the microwave. I have also made it using frozen corn and mixed vegetables.   • Mix all ingredients in a pot and warm.

1 (14 1/2 ounce) can diced tomatoes
1 (15 1/4 ounce) can corn
1 (15 ounce) can minestrone soup (ready to serve)
1 (15 ounce) can mixed vegetables
1 (15 ounce) can black beans, rinsed

Steps:

  • Combine beans; divide into four even batches, about 3-3/4 cups each., To make one batch of soup: Wash one batch of beans. Place in a large kettle; add enough water to cover. Bring to a boil; cook for 3-4 minutes. Remove from heat; cover and let stand 1 hour. , Tie spices in a cheesecloth bag. Drain and rinse beans. Return to kettle; add bouillon, spices and water. Bring to a boil. Reduce heat; cover and simmer 1-1/2 hours or until beans are tender, stirring occasionally. Remove spices. Add tomatoes and heat through.
