FIVE (OR MAYBE SIX) INGREDIENT PEANUT BUTTER OATMEAL COOKIES

These make a crispy cookie and are quick to throw together on those spur of the moment cravings or when a family member says "oh by the way I'm supposed to bring a couple dozen cookies to school/work today". This makes 2 dozen cookies. Great for beginning cooks! **Updated 3/5/2010 based on the first reviews I've adjusted the name and the ingredient list to add the the option of a 6th ingredient of using chocolate chips to the mix.

Five (Or Maybe Six) Ingredient Peanut Butter Oatmeal Cookies image

Steps:

  • In a bowl, cream peanut butter and brown sugar until fluffy.
  • Beat in egg to the creamed mixture.
  • Add oats and baking soda and mix well. Add chocolate chips in this step if using this ingredient.
  • Drop by tablespoonfuls about 2 inches apart onto GREASED baking sheets. Flatten slightly (if you skip this you get mounds as they do not spread much).
  • Bake at 350F for 6-8 minutes then let cool completely on wire rack before storing.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.
  • Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don't over-bake. Cool and store in an airtight container.

  • Mix together flour, oatmeal, and salt in separate bowl. Set aside.
  • Mix together butter and peanut butter.
  • Add sugar, egg and vanilla. Mix baking powder in 1 tsp of warm water. Add to sugar/egg mixture and mix well.
  • Add flour gradually to egg mixture and mix until well blended. Add chopped walnuts.
  • Use a cookie scoop or spoon onto cookie sheet and bake in preheated oven of 350F for 10-13 minutes.

John was hinting for oatmeal cookies and I came across Katzen's Recipe #360115 recipe and thought why not tweak it to make it with oatmeal and gluten free and this is what I came up with. Thanks Katzen. ;) FYI almond flour can be made by simply processing raw almonds in the blender until they have turned into fine crumbs. Don't over blend, otherwise you'll make almond butter! It usually takes 5 second pulses for about 20 times.

  • Heat oven to 350°F.
  • Mix flour, oatmeal, baking powder, baking soda and salt; set aside. Beat coconut oil, peanut butter and sugars in large bowl with mixer until light and fluffy.
  • Blend in eggs and vanilla. Gradually add flour mixture, beating well after each addition.
