FIX AND FORGET WHITE CHILI image

Steps:

  • 1. In a large skillet, cook chicken in hot oil just until lightly brown. Place beans in a slow cooker; mash slightly with a potato masher. 2. Add chicken to beans in the slow cooker. Stir in the chicken broth, undrained chile peppers, onion, cumin, garlic, cayenne pepper and salt. Cover and cook on low heat setting for 7-8 hours or on high for 3-4 hours. 3. If desired, serve with sour cream and avocado.

12 oz skinless, boneless chicken breasts, cubed
1 Tsp cooking oil
Three 15 oz cans Northern Beans
2 1/2 cups chicken broth
One 4 oz can diced green chile peppers
1 medium onion, chopped
1 1/2 tsp cumin
1 1/2 tsp cayenne pepper
1/4 tsp salt
sour cream
avocado slices

CROCKPOT FIX-AND-FORGET WHITE CHILI

Although this recipe uses nice white chicken breasts, I prefer to use thighs because they hold up better to crockpot cooking. This chili gets body from slightly mashed beans and flavor from the usual Mexican suspects: chile peppers, cumin seeds, and cayenne pepper. Altogether it is a very flavorsome, delicious chili, sure to warm you on a cold night. Recipe from BH&G.

Crockpot Fix-And-Forget White Chili image

Steps:

  • In a large skillet cook chicken in hot oil over medium heat until brown. Drain off fat. Set chicken aside.
  • Place drained beans in a 3-1/2 to 4-quart crockpot; mash slightly with a potato masher. Add chicken to cooker. Stir in broth, undrained chile peppers, onion, cumin seeds, cayenne pepper, salt and garlic.
  • Cover and cook on LO heat for 7 to 8 hours or on HI heat for 3-1/2 to 4 hours.
  • If desired, top individual servings with sour cream and/or avocado slices.

FIX-IT AND FORGET-IT CROCKPOT WHITE CHILI

I got this recipe out of "Fix-It and Forget-It Cookbook Feasting with your slow cooker" by Dawn J. Ranck and Phyllis Pellman Good. I absolutely love this in the winter. It seems to come out as more of a soup than a chili, and I highly recommend putting in at least one jalapeno because it adds to the flavor.

  • Combine all ingredients except sour cream, cheddar cheese, and chips in slow cooker.
  • Cover. Cook on Low 8-10 hours, or High 4-5 hours.
  • Ladle into bowls and top individual servings with sour cream, cheddar cheese, and chips.

Slow-Cooked White Chili image

Steps:

  • Place chicken and chicken broth in a saucepan over medium heat. Bring to a boil and cook until chicken is no longer pink and juices run clear, 7 to 10 minutes.
  • Transfer chicken and broth to a slow cooker. Stir in navy beans, corn, green chilies, garlic, cumin, red pepper flakes, oregano, salt, and onion powder. Cover and cook on Low until flavors are blended, 8 to 9 hours.
