BAKED FISH 'N' CHIPS WITH HONEY VINEGAR

Steps:
- Preheat oven to 425 degrees F. Coat a large baking sheet lined with foil with cooking spray.
- Arrange potatoes on baking sheet and spray them with cooking spray. Season with salt and black pepper. Bake 25 minutes, or until golden brown and tender.
- In a shallow dish, whisk together flour, baking powder and 1/2 teaspoon of salt. Whisk in milk and egg. Add cod fillets and turn to coat with batter. Add cod to a baking sheet that's been lined with foil and sprayed with cooking spray and bake 8 to 10 minutes, until golden brown and fork-tender.
- In a small bowl, whisk together vinegar and honey to serve as a dipping sauce. Serve 1 pound of the fish and all of the potatoes with this meal. Reserve 1/2 pound fish for another recipe.
- Serve with 4 cups steamed spinach.
CLASSIC FISH AND CHIPS
Steps:
- Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
- Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
- Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
- Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
- Fry the potatoes again for 1 to 2 minutes for added crispness.

- Pour buttermilk into a bowl.
- In a separate bowl, mix flour, salt, and garlic powder. Dip each fish portion into buttermilk then roll in flour until evenly covered, set aside on plate.
- Heat deep-fat fryer to 360 degrees F and cook fish for 6-8 minutes, or until golden brown and done. To check for doneness, cut into one portion and check to see if fish is flaky and looks milky white. Serve with french fries, coleslaw, and garlic bread.

Steps:
- Wash fillet in lemon and water.
- Season with salt and pepper.
- Chill while you prepare the batter.
- Sprinkle yeast over warm water.
- Let stand until dissolved.
- Place flour in a bowl with the salt and sugar.
- Make a well in the center.
- Add the dissolved yeast, oil and 2/3 of the beer.
- Stir with a wooden spoon just to combine. Stir in remaining beer.
- Let the batter stand, covered, in a warm place for 30-35 minuted, until it has thickened and become frothy.
- Dry fish with paper towels and cut each fillet diagonally into 2 pieces.
- Heat the oven to warm.
- Stir together remaining flour, pepper and salt in a plate. Heat the oil.
- Whip egg white until it forms soft peaks and fold into batter.
- Coat fish with seasoned flour, patting so they are evenly coated.
- Shake off excess flour.
- Using a 2 pronged fork, dip the fish into the batter.
- Lift it out and hold it over bowl 5 seconds to drip off excess batter.
- Carefully lower the piece of fish into the hot oil and deep fry, turning once, until golden crisp.
- Fry 1-2 pieces at a time, transferring to paper towels as you go.

PAN SEARED SALMON AND "CHIPS"
This a good recipe for a quick dinner. It goes well with my version of "Chips" for a "Gourmet Fish n Chips" meal!

Steps:
- For the Fillets:.
- Heat Olive Oil in a small pan over medium heat.
- Lightly sprinkle seasonings over meat side of the fillet.
- Place Salmon meat side down in hot oil to sear flavorings into fillet. 2-3 minutes.
- Using tongs carefully flip Salmon to skin side down. Reduce heat to low/simmer and put lid over the pan.
- Let cook until meat is tender and flakes easily 5-10 minutes for thin fillets, longer if using thick cut fillet.
- Making more than one serving is simple and easy, just use a bigger pan! If making a bigger batch of these heat oven to 350, and once the fillet is seared place on a non stick pan with edges, once all fillets are seared place in oven for 5-10 minutes or so to finish the cooking!
- For the Chips:.
- Wash potato and slice into rounds.
- Place in microwave safe bowl and add butter, cover and microwave on high for aprox 4-5 minutes, or until all rounds are tender when pricked with fork.
- Toss rounds with BBQ seasoning (to taste) and Sea Salt.

I live in a beach town in CT and this recipe is from Flanders Fish Market, a local spot made famous on Food Network a couple of years ago. This place is the best seafood restaurant around. *Note: You can use cod,haddock or any white fish of your choice

- Heat oil to medium-high heat in large, flat skillet.
- Rinse fish in cold water and pat dry with paper towels.
- Combine flour and cornmeal together and set aside in large bowl.
- Combine egg, milk and water in a medium size bowl and whip together.
- Dip fish into milk mixture and then coat with cornmeal mixture.
- Carefully lay fillets in the hot oil from front to back, being careful not to splash. Using tongs to do this is recommended.
- The oil should just cover the fish. Cook fish until golden brown, this should take about 4 to 7 minutes depending on your stove. To check doneness, break open fillet: it should be white all the way through, with no transparency.
- Serve with Spicy Sauce and wedge of lemon.

This is my favorite fish and chips recipe. The fish is extra crunchy! For an extra-special abundant seafood dinner, serve this with my recipe #211611 and my recipe #211428, with coleslaw. You'll love this meal! It's easy to prepare and your guests will think you're a professional chef! Try it! Important Note: Use a deep fryer. It is too dangerous to use even a deep skillet!

Steps:
- Combine all batter ingredients in a mixing bowl.
- Cut the fillets into desired sized pieces.
- Dust fillets with flour.
- Dip the fillets in the batter.
- Fry fillets in deep fryer at 375 degrees with at least 2 inches of vegetable oil until golden brown. Don't crowd the fillets while frying.
- Drain fillets on paper towels or brown paper bags from the grocery store.
- Serve with french fries, tarter sauce, cocktail sauce, malt vinegar and cole slaw or cucumber salad (see Zaar recipe 211355).
