- Hull and quarter 1 quart strawberries. Toss with 1 teaspoon sugar in a large bowl. Sprinkle a layer of gingersnap crumbs or graham cracker crumbs in the bottom of parfait glasses. Top with the berries. Mix 1 cup nonfat Greek yogurt with 2 tablespoons honey and 1/2 teaspoon cinnamon, then spoon over the berries.
FLUFFY STRAWBERRY PARFAITS
Combine strawberry flavor gelatin and whipped topping and you do indeed get dessert parfaits that are fluffy. (Delicious, too!)

Steps:
- Stir boiling water into dry gelatin mix at least 2 min. or until completely dissolved. Add ice cubes; stir until completely melted. Pour about 1/3 cup of gelatin mixture into each of four parfait glasses or dessert dishes.
- Refrigerate 1 hour or until set. Meanwhile, let remaining gelatin stand at room temperature.
- Add 1 cup of the whipped topping to reserved gelatin; stir until well blended. Spoon evenly over gelatin layer in parfait glasses. Refrigerate 15 min. or until set. Top with remaining whipped topping just before serving. Store leftovers in refrigerator.

FLUFFY STRAWBERRY PIE
A light and luscious ending to a meal. Adopted from the Recipezaar account Feb 2005. This pie works well using all light products, such as sugar free strawberry Jello, fat free, sugar free vanilla Jello pudding, ultra low fat cool whip and skim milk. I used a graham crust when I tried it, but a standard pastry crust or shortbread crust would be good too. The packet size in the recipe is the standard 4 serving size package.

Steps:
- Completely dissolve gelatin in boiling water.
- Add ice cubes and stir until melted.
- Prepare pie filling mix with 3/4 cup milk as directed on package for about 2 minutes.
- Blend in gelatin.
- Chill, if necessary, until thickened.
- Fold in 2 cups of the whipped topping and strawberries.
- Pour into crust.
- Chill in refrigerator 3 hours before serving.
- Garnish with remaining whipped topping and additional strawberries, if desired.

- Sprinkle gelatin over 1/4 cup water in a small bowl. Stir once or twice and then let stand about 5 minutes.
- Process the strawberries and sugar in a blender or food processor until smooth, stopping to scrape down the sides as needed. (Note: When I used frozen strawberries I could have stopped my no-bake dessert at this step - I had a perfect sorbet - see below!)
- Transfer strawberry mixture to a small saucepan and bring to a boil over medium-high heat. Remove from heat. Add gelatin to strawberry mixture, stirring constantly until the gelatin is dissolved. Cover and chill, stirring occasionally, until consistency of unbeaten egg whites, about 30 minutes.
- Beat heavy cream at low speed until foamy; increase speed to medium-high and beat until soft peaks form. Fold whipped cream into strawberry mixture until well blended. Cover and chill at least 30 minutes.

- Place a metal mixing bowl and the beaters in the freezer. Make sure they chill for 30-60 minutes before whipping the cream. Add the cream container to the freezer in the last 5 minutes of this process so the cream is very cold also.
- Place the strawberries, lemon juice, and the 1/4 C sugar in a blender. Blend for a minute on high until combined and a thick puree results. Set aside.
- Once everything is chilled for the whipped cream, add the cold cream, powdered sugar, and vanilla to the cold mixing bowl. Using an electric hand-mixer, beat on low for about a minute and then progressively add more speed until you are at a medium-high speed and nothing is splattering out. It takes about 5 minutes total to get the cream whipped into soft peaks as seen above in the photos.
- Next you will add 3/4 of the strawberry puree into the whipped cream. Reserve the other 1/4 to use as a pretty layer inside the dessert cups as you get these ready. Now fold the puree gently into the whipped cream until it is all combined evenly. .
