FORTUNE COOKIES SO EASY

Taste and look just like the ones you get at a Chinese restaurant! I was very pleased with my first attempt baking these! Adding your own personalized message allows you to create great favors for any occasion! Alternatively, I have rolled these into tube-like cigar shapes and filled them with icing for other occasions which have been a crowd pleaser!

Fortune Cookies So Easy image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets, or line with parchment paper. Have fortunes ready to go on small strips of paper.
  • In a large glass or metal bowl, whip egg whites and sugar on high speed of an electric mixer until frothy, about 2 minutes. Reduce speed to low, and stir in melted butter, vanilla, almond extract, water and flour one at a time, mixing well after each. Consistency should resemble pancake batter. Spoon the batter into 3 inch circles on the prepared baking sheets. Leave room between for spreading.
  • Bake for 5 to 7 minutes in the preheated oven, or until the edges begin to brown slightly. Quickly remove one at a time, place a message in the center, and fold in half. Fold the ends of the half together into a horse shoe shape. If they spring open, place them in a muffin tin to cool until set.

Steps:

  • Cooking spray, for pans
  • Write your fortunes on 24 pieces of paper that are about 1/2-inch wide and 2 1/2-inches long.
  • Preheat the oven to 300 degrees F.
  • In a small bowl sift together the flour, cornstarch and sugar.
  • In a medium bowl whisk together the egg whites, vanilla, oil, and water until smooth. Add the dry ingredients into the wet ingredients and mix until a smooth batter is formed.
  • Working in batches of 4, drop the batter by tablespoons onto a nonstick baking sheet that has been lightly coated with cooking spray. Tilt the baking sheet in a circular motion to spread the batter into 4-inch diameter circles.
  • Bake until the edges of the cookies are golden brown, about 10 minutes. Remove from oven, and working quickly, use a spatula to remove the cookies from the baking sheet. Put a fortune into the center of a cookie and fold it in half. Bring the points together with open seams on the outside. Arrange in muffin tins to help keep the shape while cooling.
  • Repeat with remaining fortunes and cookies. Transfer to a serving bowl or basket and serve.

Great Big Fortune Cookies with Pomegranate Granita image

Steps:

  • To make the Granita: In a bowl whisk the liquids together. Take off 1/2 cup of the liquid, add the sponged gelatin and warm it to melt the gelatin. Combine all the liquids and pour into an 8 by 8-inch pan. Freeze overnight. Scrape the next day into a freezer container.
  • Preheat the oven to 350 degrees F.
  • To make the Fortune Cookie: Cut a stencil out of a plastic coffee can lid in the shape of a 6-inch disk.
  • Whip the egg whites until stiff and chill.
  • In a mixer, cream the butter; then add the sugar and continue mixing. Add the flour and blend in; then add the vanilla and blend again. Add the chilled egg whites and mix on low until well incorporated and the batter is smooth.
  • With a small offset spatula, spread batter through the stencil onto a silicone baking mat- or parchment paper-lined cookie sheet, about 4 per cookie sheet. Bake until light golden brown, 7 to 8 minutes.
  • Quickly remove the pan from the oven and 1 at a time place a fortune across the center with a bit hanging out. Fold cookie circle in half over fortune; then in half again with flaps only slightly overlapping each other, bringing the opposing sides together and pinch. Let cool. Serve next to a frozen bowl of granita.

  • Write individual fortunes on strips of paper. Sift flour, cornstarch, sugar, and salt into a medium bowl. Add oil, egg whites, water, and vanilla extract; stir until smooth. Steps:

  • Preheat oven to 375 degrees F.
  • Lightly whip the egg white, hazelnut extract, hazelnut paste, and sugar. Sift the flour and mix into the egg white until smooth. Stir in the butter.
  • Using a template 3 1/2-inch round, spread the batter on a sheet pan lined with a silpat. (If you don't have a template, you can drop 2 teaspoons of batter onto the sheet pan and spread evenly into a 3 1/2-inch circle.)
